Noodlebake  Absolutely yummy!  Make a day ahead and rewarms beautifully.  Add my onion bread below (which reheats) or bread and flavored oil from your deli.  Add a salad.  I have one with spring onions and mandrian oranges.

Noodle Bake

 

 2 lbs. high quality ground beef

1 ½ tsp garlic

2 14.5 oz cans tomato sauce

1  12 oz  pkg  medium egg noodles

1 Tbsp butter, plus 2 Tbsp.

1 16 oz sour cream

1 lg softened cream cheese

Optional: 2 Tbsp. chives

 

In large skillet, brown and well drain ground beef.

Add tomato sauce, and garlic and simmer about 20 minutes .

 

Butter 3 qt casserole and place a side.

 

In bowl, mix sour cream and softened cream cheese.

(I use my hand mixer).

Hand stir chives in.

 

Cook egg noodles aldente with oil in the water to prevent clumping.

Drain and toss lightly with 2 tbsp butter.

 

 

In buttered 3 qt casserole layer:

 

1/2 of the noodles

1/2 of the cheese mixture

1/2 of the meat mixture.

 

Repeat layers in same order.

 

Sprinkle with cheddar cheese.

 

Bake at 350 degrees for about 45 min.  Cheese may be covered to prevent browning.

May be made a day ahead, refrigerated and cooked for 1 hour.

 

 

 

Onion Bread

Preheat oven to 350 degrees

  • loaf  French bread cut width of your little finger.

1-1½ sticks butter

1 large onion, grated with liquid

Aluminum foil

Bake sheet

On bake sheet with a piece of aluminum foil, place cut French bread as a loaf with pieces still standing in order.

Mix melted butter into grated onion.

Using a pastry brush, brush on butter mixture with onion (meat) onto one side of each piece of bread. 

Baste the loaf top with the rest of butter.

Fold the foil closely to close and bake for 20-30 minutes until well heated.  You can part the foil to toast the top only a minute (don’t dry it out).

Reheats well!

I've done Beef Wellington before; it's been awhile but maybe I should revisit it.

 

I've NEVER done Prime rib before (we're not big beef eaters, lol). Suggestions for a great recipe? Standing crown roast...is this what many of you are talking about?

 

Needs to serve 6 with leftovers, lol.

@Mom2Dogs  I follow a recipe from Southern Living at Home Holiday Cookbook (don't remember what year it came out). I remember it calls for puff pastry and you make it the night before, bake on Christmas Day. We did it for....24 people I think (the older 2 boys were toddlers). It's been a LONG time, lol, but it was GOOD and pretty easy.

In the past I have done Prime Rib forC hristmas Eve and beef tenderloin for Christmas dinner.

@ThinkingOutLoud   I've done goose, duck and pheasant before and it isn't a favorite of the 4 sons; too expensive for an "eh, it was ok but don't want it again, thanks". Cornish game hens are mini-chickens, lol, in my book. We eat poultry ALL. THE. TIME. so I'm trying to steer away from any fowl dish for the Christmas season. You're right, though, those are ALL great dishes for Christmas dinner! Smiley Happy
