Need an idea for a brunch dish please!

Invited to a potluck brunch. I need a dish that is filling, not carb loaded and needs no reheating! Too many people bringing salad!

So out of ideas! Thanks!

how about a spinach and mushroom quiche or one with bacon? You can do a crustless one if carbs are an issue

I don't know when the brunch is but, if this weekend, go buy, or make Chocolate Covered Strawberries......and/or...mini-muffins, also, already mentioned...deviled eggs....and...a fruit bowl.....or sliced fruit with fruit dip.......coffee cake.....small tea cakes (cube size sold at bakeries)...some other mini-dessert item.....or....cheese and fruit tray........good luck.

Along the same lines as a crustless quiche, my vote would be for a frittata, & they're fine served at room temperature. If you have a pretty casserole dish, or even a large cast iron skillet, you could serve it straight from there.

The veggie/cheese combinations are endless: spinach, onion & Parmesan, or prosciutto, ham or bacon w/ roasted tomatoes & Fontina or Asiago cheese, etc. You can really throw in almost anything!

Enjoy the potluck!

Smoked salmon quiche. Always my favorite for brunch.

I would take a big bowl of fresh fruit.

Strawberries, blueberries, grapes. Can't go wrong, everyone loves fresh fruit.
