I hope your family enjoys it much as mine does.

One year for Thanksgiving, my Mom tried to use Stouffer's Macaroni and Cheese instead of making it. We were both young adults, but we whined until she made it. We (my Dad included) tease her about that to this day.

As much as I like Mac & Cheese, I always review the ingredients then pass on the making. It's certainly not low-cal.

Old Fashioned Macaroni and Cheese

Hot boiled macaroni ( 7 or 8 oz. uncooked)

2 cups cut-up sharp Cheddar cheese

1 tsp. salt and 1/4 tsp. pepper

2 cups milk

Paprika

Heat oven to 350. Place cooked macaroni,cheese,salt and pepper in alternate layers in buttered oblong baking dish, ending with a layer of cheese on top. Pour milk over all. Sprinkle with paprika. Bake 35 to 45 min. or until golden brown on top. Serve hot from baking dish garnished, if desired, with parsley sprigs,pimento strips or pepper rings. 6 to 8 servings.

Macaroni and Cheese with Sweet or Sour Cream

Make Old-fashioned Macaroni and Cheese except use 2 1/2 cups sweet or sour cream in place of milk

Exactly!! That is why it is a comfort food. Low fat or low calorie foods taste terrible to me. Not everyone is fat or on a restricted diet.

Here is the one I make......It is low calorie, low fat and very good!

Cabot Light Mac & Cheese

Makes 8 servings

Ingredients:

2 cups small dry elbow macaroni
Cooking spray
3 tablespoons All-Purpose Flour
2 cups lowfat (1%) milk
1/4 teaspoon dry mustard
1/4 teaspoon garlic powder (optional)
1/4 teaspoon salt
Freshly ground black pepper, to taste
Pinch of ground red pepper (cayenne)
Dash of Worcestershire sauce
2 ounces Cabot Neufchatel
Reduced Fat Cream Cheese
8 ounces Cabot
Sharp Light Cheddar, grated & divided (about 2 cups)
1/3 cup Italian-flavored or plain dry breadcrumbs

Directions:

1. Cook macaroni according to package directions; drain well.

2. Preheat oven to 350°F. Spray a 2 1/2-quart baking dish with cooking spray and set aside.

3. Place flour in a large saucepan over medium heat, gradually whisking in milk. Add mustard, garlic powder, salt, black pepper, red pepper and Worcestershire. Continue cooking until sauce thickens, stirring constantly.

4. Reduce heat to low. Stir in cream cheese until well blended; add 2/3 of shredded cheese and stir until melted. Add macaroni, stirring until well coated. Pour into prepared baking dish.

5. Toss remaining shredded cheese with breadcrumbs and sprinkle over top of macaroni; spray with cooking spray.

6. Bake for 20 minutes, or until golden on top and bubbling throughout.

The 365 recipes for Pasta cookbook is my go-to on this

I don't have it handy on my computer but it is very basic and you could find the book in the library.

just milk and cheese and butter

no eggs or anything else
