This summer I've made the plain ole Cucumber & thinly sliced Onion salad with a little water, a little sugar, vinegar, salt and dill. It is so good and so refreshing.

It would be helpful to know what kind of salad you are refering to. Veggie, fruit, pasta?
I find all kinds of recipes on pintrest, its one of my go to for recipes.

Pistachio Pudding Salad
1 16 oz can crushed pineapple
1 package instant pistachio pudding
1 small can mandarin oranges, drained
1 cup chopped walnuts
2 apples chopped up
8 oz Cool Whip
Add pineapple to DRY pudding, mix in remaining ingredients, refrigerate.

Good side salad for lunch ....using chicken makes it almost main dish or leave chicken out......
Spinach Salad with Pasta
2 cups penne noodles, cooked and drained
3 cups fresh spinach, torn
1 cup cooked chicken, cut in strips
1 cup sliced strawberries
1/2 cup sliced red onion
1/3 cup coarsely chopped walnuts
1/4 cup shredded Parmesan cheese
1/2 cup bottled Balsamic Viniagrette Salad Dressing
Cook pasta, drain, rinse with cold water and drain again. Place spinach in bowl and add pasta. Toss lightly to combine. Add rest of ingredients, except dressing, and mix gently. When ready to serve, drizzle with dressing; toss lightly and serve.
For dinner side dish.....
Spinach Rice Salad
1 cup Uncle Ben's Converted Rice
1/2 cup bottled Italian Salad Dressing
1 tablespoon soy sauce
1/2 teaspoon sugar
2 cups fresh spinach, cut into thin strips
1/2 cup sliced celery
1/2 cup sliced green onions
1/3 cup crumbled crisp bacon
Cook rice according to package directions. Transfer to a bowl and cool slightly. Combine dressing, soy sauce and sugar. Stir into warm rice. Cover and chill. Fold in remaining ingredients before serving.

Apple Cranberry Relish
Ingredients:
Directions:
Place thawed Harvest Apples in a bowl and coarsely chop. Add Cranberries. Stir to combine.
Pour mixture into a greased baking pan. Spread evenly and bake in a 375°F for 30 minutes.
Let sit 10 minutes before serving. Or serve cold.
Relish? Alone? Salad? Side Dish? Dessert?
Yes! Yes! Yes! Delicious!
