I know for a fact that the Strawberry Poppyseed Salad by Panera is a hit and I haven't found anyone that doesn't like it.
It's fresh and easy to prepare.

@ECBG, i'm pretty sure @KingstonsMom was referring to the 6 dashes tobacco (it isn't a hot salad) listed in your recipe.

Chick Pea Salad
Drain and rinse two 15 oz. cans of chick peas.
Chop into approximately 1/2 inch pieces:
1 yellow bell pepper
1 red bell pepper
1 large tomato
1 cup cucumber
Put all ingredients into large bowl.
Add 1/2 tsp. dried oregano & 1 tsp. dried parsley.
Add some fresh ground black pepper.
Dressing: 1 tblsp. fresh lemon juice
2 1/2 tblsp. red wine vinegar
3 tblsp. olive oil
Mix all ingredients and chill before serving.
May be topped with feta cheese if desired.
Another summer favorite is Raspberry, Orange Chicken Salad
You will need cooked chicken, either grilled chicken tenders,
leftover roasted chicken or a rotisserie cooked chicken from
supermarket.
I use a store bought Spring Mix of greens
Add fresh raspberries and canned Mandarin orange slices.
Top with slices of cooked chicken and pecan pieces.
If you like spiced pecans, here is a recipe for 10 oz. pkg of pecans:
In bowl mix 10 oz. of pecans with 2T. melted butter.
Add 1 1/2 tsp. cumin and 2 Tblsp. sugar.
Add fresh ground pepper.
Spread into baking pan and bake 20 minutes
at 300 degrees. Cool and store in airtight container.
Dressing is bottled raspberry vinaigrette or homemade if you have a recipe.

This is not really a recipe, but when my five children were young and really did not have much of an appetite on a hot humid summer day, I would take my largest salad bowl and made a huge
fruit salad. I would use any summer fruits, melons and berries available at the time. Sometimes I would add canned pineapple chunks and
canned Mandarin orange slices. If I used apples, I would first put the cut pieces into a small bowl of orange juice or lemon juice , to keep the pieces from turning brown.
When I served the salad, I topped the bowl of fruit with scoops of sherbet in lime , orange and raspberry flavors. Sometimes I just
used rainbow sherbet that contained all the flavors. I would put a large serving spoon in the salad and let the kids help themselves and spoon it into their undividual bowls.
They loved it.

We also add to that one package (or half if you are not quite bold enough) of Taco Seasoning Mix into the salad. My family if a bit odd but this salad is expected every year on the table at Thanksgiving. No one wants to wait until summer to have this fiesta!!

@Houstonoilers & @beckyb1012....or you can use the 'Chili Cheese Frito's' if you want to kick it up a notch. This salad is great and simple for the summer months or anytime actually. Thanks for sharing.

This isn't an actual recipe, but we like really crisp iceberry lettuce with cold seedless grapes (sliced in halves), sliced strawberries, green onions and Beverly's Raspberry Poppyseed Dressing (from the grocer but I think it's available elsewhere). Simple, but very good.
