@lucky-girl I have an easy, but really tasty fruit salad recipe.

 

1 can peach pie filling

1 package frozen strawberries, defrosted

1 can pineapple chunks, drained

3 sliced bananas 

1 cup sugar

 

Stir everything but bananas together until sugar blends with other ingredients. Add sliced bananas. Stir gently to mix. Serve.

Ina Garten's Cape Cod Chopped Salad is wonderful!  I would not be afraid to use pears, mangoes or orange slices as the fruit.

 

  • 8 ounces thick-cut bacon, such as Nieman Ranch
  • 8 ounces baby arugula
  • 1 large Granny Smith apple, peeled and diced
  • ½ cup toasted walnut halves, coarsely chopped
  • ½ cup dried cranberries (or cherries or blueberries)
  • 6 ounces blue cheese, such as Roquefort, crumbled
  • For the dressing:
  • 3 tablespoons good apple cider vinegar
  • 1 teaspoon grated orange zest
  • 2 tablespoons freshly squeezed orange juice
  • 2 ½ teaspoons Dijon mustard
  • 2 tablespoons pure maple syrup
  • Kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2/3 cup good olive oil

Preheat the oven to 400 degrees.

Place a baking rack on a sheet pan and lay the bacon slices on the rack. Roast the bacon for about 20 minutes, until nicely browned. Allow to cool.

 

In a large bowl, toss together the arugula, apple, walnuts, cranberries, and blue cheese.

 

For the dressing, whisk together the vinegar, orange zest, orange juice, mustard, maple syrup, 1½ teaspoons salt, and the pepper in a bowl. Slowly whisk in the olive oil.

 

Chop the bacon in large pieces and add it to the salad. Toss the salad with just enough dressing to moisten. Sprinkle with ½ teaspoon salt and toss well. Serve immediately.

This is a salad I use always for holidays and a few other times between.  I increase the dressing buy 1/2.

The first time I made this, our 17 year old son finished the leftovers in the kitchen!  He was my salad lover!Smiley Happy

 

Mandarin Orange Salad

 

½ C sliced almonds

3 T sugar

½  Head iceburg lettuce, torn

½  Head romaine lettuce, torn

1 C chopped celery

  • green onions, and greens cut in 1/4-1/3 in pieces

11 oz can mandarin oranges, well drained

DRESSING:

½ tsp salt

2-3 dashes freshly ground pepper

¼ C olive oil

2 Tbsp red wine vinegar

1 Tbsp chopped parsley

2 Tbsp sugar

6 dashes  Tabasco (it isn't a hot salad)

 

Lightly mix and glaze almonds in sauce pan, store in air tight container.

Mix dressing ingredients, chill slightly (I use an old Good Seasonings glass salad dressing shaker)

Put lettuces in salad bowl.

Add cut veggies and oranges on top.

Put dressing on last minute; toss.

4 servings.

Only teasing my friend, but you may want to change the last ingredient ( 6 dashes tobacco), for any non-smokers, LOL!

You never know how strong you are until being strong is the only choice you have.

The Texas Pete isn't any more than a dash of black pepper. 

I can't tolerate "hot" in any dish.  I burn very easily.Smiley Happy

@ECBG,  i'm pretty sure @KingstonsMom  was referring to the 6 dashes tobacco (it isn't a hot salad) listed in your recipe.
