Need a tossed green salad recipe for Easter?

The main dish is ham. Please post some yummy recipes for me.

For me, it's all in the dressing.  I like a mild-tasting vinaigrette:

 

1 tbsp cider vinegar

1 tsp minced onion

3 tbsp extra-virgin olive oil

1 tsp honey

1/2 tsp mayonnaise

1/2 tsp Dijon mustard

1/4 tsp salt

1/4 tsp pepper

 

Put everything in a jar with a lid and shake to emulsify.

As much as I like a good salad, sorry, it's jut not something I think of as part of a special or holiday meal, so while I put together good salads, based on a variety of ingredients, don't think I'd be of much help.

Salad

*greens, usually spinach

*sliced apples and or blueberries and strawberries

*blue cheese crumbles

*toasted pecan pieces

 

 

dressing:

*olive oil

*balsamic vinegar

*dash of balsamic glaze

*gourmet vinegar (using a blueberry one now, but any or none)

*can add a little Dijon mustard but not nec.

 

Sorry no measurements, I just throw together. Don't know if it's special enough for your Easter meal but it's good.

A seven layer salad is what I'd layer in a pretty glass bowl for Easter. There are so many versions on the internet. Mine includes:

Lettuce, frozen peas, tomatoes, peppers, hard-boiled eggs, red onion with a mayonnaise based dressing. I sprinkle lots of shredded cheese and bacon bits on the top.

I like a green salad with any meal, but especially a heavy one. I agree that the vinaigrette is everything. Just Google a recipe for a vinaigrette dressing, my preference might not be yours. I like more red wine vinegar than the traditional recipe and I never add Mayo. The usual ingredients are Dijon mustard, garlic, a touch of honey and S&P.

@wonderfulworld  I've been making this salad for Easter for at least 40 years. It goes great with ham. I think I may have posted this before.

Dutchy Salad

Ingredients:

  • 1 head lettuce washed, dried and torn (I use Romaine because it stands up to the dressing)
  • 1-2 cups of frozen baby peas
  • 1 red onion (cut any way you like it in a salad) soak cut onion in ice water for 10 min. and drain before assembling the salad
  • shredded or grated cheddar cheese 
  • 3-4 strips of crumbled bacon (you can leave this out if you don’t eat bacon, but then it won’t be as Dutchy.
  • 3 hard-cooked eggs - sliced
Dressing (can be doubled, etc.)
  • 1 teaspoon prepared yellow mustard (or a combo of dry mustard and prepared to taste)
  •  2 tablespoons heavy cream 
  • 2 ½ tablespoons sugar
  • ½ teaspoon salt
  • ½ c. Miracle Whip
  • 2 tablespoons vinegar
Directions:
Mix together salt, sugar, mustard and cream.  Add vinegar and salad dressing and stir until smooth.  Make sure you taste the dressing for the correct sweet/sour combination.  Sometimes it seems to want more vinegar. Refrigerate to chill.
This dressing can be made a day ahead of time and put into a non-reactive container in the refrigerator.
To assemble the salad, put lettuce in a big bowl sprinkle frozen peas and onions (cheese and bacon, if desired) decoratively on top.  You can hold the assembled salad in the refrigerator for a half hour or so, but don’t let the peas lose their crispness.  I like to dress the salad and lightly mix it at the table, or you can do it just before going to the table.

Slaw:

1/2 head red cabbage, thinly sliced 4 limes, juicedÄ
2 tablespoons sriracha
1 teaspoon kosher salt, plus more for seasoning

1/4 teaspoon ground black pepper, plus more for seasoning
2 fresh mangos
1 bunch scallions, green and white parts, thinly slicedÄ

4 sprigs mint, leaves torn

 

Mix all together except mangos and add them just before serving. Can make it as hot or not as you like, for some add a little mayo (Duke's Lime is wonderful!)
