I've been asked to bring a main dish (vegetarian) for our Easter gathering. Does anyone have a recipe they've tried and like.....Thank you!

There are several vegetarian lasagna recipes.

Our daughter-in-law makes a vegetarian quiche with spinach and mushrooms.

One of our favorites is a vegan mushroom/pasta dish. You can modify it if you are okay with milk and butter.

Saute mushrooms and shallots in a bit of olive oil.

Remove them from the pan.

Make a roux - I use Earth Balance and flour.

Stir in veggie broth and then soy or almond milk.

Season with salt, pepper, thyme.. whatever you like.

Put the mushrooms and shallots back into the mixture.

Add pasta.

Yum

The lasagna would be good for everyone. Take fresh cheese to sprinkle on top.

I think any kind of pasta dish is great.

There's a huge difference between veggie and vegan. I ate vegan for several years and my son and DIL still do. They would never eat anything with butter, milk or cheese, so if the guests are vegan, be mindful of that.

Did you see that thread on Cottage Cheese Roast? I made that over the weekend. It wasn't half bad, but next time I'm going to add some spinach to it. I substituted Swanson's Flavor Boost (Mushroom/Marsala and Garlic Herb) in lieu of George Washington broth.
