I have seen several recipes online, but they call for some not so common ingredients. I am looking for an old fashioned Mac and cheese recipe that is simple, yet delicious. Any ideas? I would make an 8x8 pan of it to try it and if it is really good, I would make a lasagna pan. Thanks in advance! ☃️

One recipe that seems to be what your looking for is online at Real Food by Sarah "Old Fashioned Baked Macaroni and Cheese.
Simple common ingredients and you could tweak it to what you like i.e. leave in hot sauce or omit whatever you prefer.

Here's the Mac & Cheese recipe from "Cooking With Mickey, Vol. 11", from the Disney theme parks in the 1990s:
1/8 C margarine or butter
1/8 C flour
1/2 C milk
1/2 lb orange American cheese
1 tsp yellow mustard
Salt
Pepper
3 Cups rotini pasta or shells
1/4 C grated cheddar cheese
Melt margarine and add flour. Cook 5-7 minutes. Heat milk separately and whisk into the roux. Simmer about 10 minutes until mixture thickens. Add American cheese and yellow mustard. Blend well and season to taste with salt and pepper. Do not boil sauce once cheese has been added. Cook pasta. Drain well and rinse under cold water. Drain again and mix with sauce. Place in baking dish and sprinked with grated cheddar. Broil until cheese melts and is lightly browned.
I love this! Sometimes I make it with other cheeses.

I combine the recipes I have used over the years, and don't have a recipe to follow. I combine nearly all the cheeses I have in the fridge with cream and a touch of mustard mix it together in a shallow baking pan, top with buttered break crumbs and bake. I get asked to bring it to many pot lucks so I guess people like it,

Sigh. Following this thread. I have tried numerous recipes only to be disappointed--baked, slow-cooker, pressure cooker, etc. I like a creamy mac & cheese and don't know how to get it. All the recipes that call for "real cheese" may start out as creamy, but within minutes (and certainly with any leftovers) they have a dry texture. The nearest I've come to having one turn out with the texture I like is Paula Deen's slow cooker mac & cheese, but the cheddar cheese soup in the recipe gives it a whangy taste that I just don't like. Sigh, again.

@Ainhisg, are you using pre-shredded cheese? They are treated with an anti-clumping agent that affects melting.
Try using block cheese and grating it yourself. Makes a huge difference.

Recipe from my BF's mother
Mac & Cheese –
2 cups uncooked macaroni
½ cup of butter
½ cup flour
½ tsp each dry mustard, salt/pepper
1 ½ cups milk
Velveeta – 8 oz
¼ cup parmesan cheese
1 cup sour cream
2 cups grated cheddar
Cook macaroni.
Make roux w/ butter flour and spices. Add (warmed) milk cooking/stirring until thickened. Add Velveeta, parmesan and sour cream.
Combine cheddar with macaroni.
Add sauce and transfer to baking dish. Bake at 350 for 40 minutes.

This has been my recipe for more years than I can remember:
1 lb elbow macaroni, cooked to al dente and drained
6 tbsp butter
6 tbsp flour
1/2 tsp dried mustard (optional, but adds a nice tang)
1 tsp salt
4 1/2 cups whole milk
1 lb shredded sharp cheddar cheese
6 oz shredded Monterey Jack cheese
Topping:
1 cup Panko crumbs
1/4 cup butter, melted
Melt 6 tbsp butter in big pot. Whisk in flour, dry mustard, and salt for a couple minutes.
Whisk in milk to mix well 1 cup at a time. Bring to simmer and whisk until sauce is thick and creamy, about 4 minutes.
Take off heat and whisk in 3 cups cheddar a handful at a time until melted and creamy. Do the same with the Monterey Jack. Stir in cooked pasta.
Spread 1/2 of mixture in 9X13" baking dish. Sprinkle rest of shredded cheese on top.
Spread rest of pasta mixture over top of cheese.
Mix 1/4 cup melted butter and Panko crumbs in dish. Sprinkle on top of pasta.
Bake in 350 degree oven until topping is golden, 20-25 minutes.
