This cozy baked mac and cheese uses cheddar and Gruyère, and has a crunchy breadcrumb topping.
While whisking, slowly pour in hot milk. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick.
Remove pan from heat. Stir in salt, nutmeg, black pepper, cayenne pepper, 3 cups cheddar cheese, and 1 1/2 cups Gruyère or 1 cup Pecorino Romano; set cheese sauce aside.
Fill a large saucepan with water; bring to a boil. Add macaroni; cook 2 to 3 minutes less than manufacturer's directions, until the outside of pasta is cooked and the inside is underdone. Transfer macaroni to a colander, rinse under cold running water, and drain well.
Undercook the macaroni: Be sure to read the instructions on the box regarding cook time because different brands of macaroni cook at different rates.
Stir macaroni into the reserved cheese sauce
Pour mixture into prepared dish. Sprinkle remaining 1 1/2 cups cheddar cheese, 1/2 cup Gruyère or 1/4 cup Pecorino Romano, and breadcrumbs over top.
Bake until browned on top, about 30 minutes. Transfer dish to a wire rack to cool 5 minutes; serve hot.

I use the same recipe as @deepwaterdotter with more cheese on top instead of panko. This is the way my grandmother made it and it was baked in the oven of a wood fired cook stove; the cheesy top crust came out brown and crisp.

I made this one from Toni's Recipes(tonisrecipes.com) for Thanksgiving. It was very good and easy to make. It's the way I make mine, except, I use Velveeta, one stick of butter, sharp and mild cheddar cheese and whole milk. Both come out very creamy and nice and brown and crispy on top!
No roux, no egg.
Sometimes I make it with a roux and or eggs but I prefer the one above most.

We had a day-after-Thanksgiving gathering yesterday, sort of a potluck.
Someone brought potatoes au gratin (not exactly the same dish) that was to die for. She used a cheese I had never considered.
I think cheese is the key since Mac and white sauce is pretty generic.
But cheese is very personal.

@Ainhisg If you want creamy and mild use Velveeta cheese product. (I think the recipe is still printed on the box.)
I am in the midst of unpacking and settling in to a new rental unit so I don't have access to any of my recipes just yet.

I want a recipe with smooth, cheesy sauce--like my mom used to make. I want ooey gooey saucy mac-n-cheese!!! Not a fan of Velveeta either--gross and way too salty.

@hopi : The best mac and cheese I have ever eaten is served at Fleming's Steakhouse. Google flemings's chiptole cheddar macaroni and cheese recipe. TDF

When I first met my husband he mentioned once that he loved when his mom made macaroni and cheese. Well, his mother passed away when he was 14 so I thought I would do my best to recreate what I assumed was a treasured family recipe.
I scoured the Internet, found an option that I figured I could handle and bought at least twenty dollars worth of cheese and other ingredients. I baked it and when he came over later that evening, I proudly served it. He said, this is good but you didn't need to go to so much trouble. My mom used the stuff in the blue box.

Same deal with my husband. He was always telling me how much he loved mac & cheese. Shortly after we were married I went to great lengths to make the most delicious from-scratch mac&cheese that I could. He didn't like it. He only likes the stuff in the blue box.
