You could go the simple and delicious route and just roast the potatoes. Peel and cut potatoes into 1/2" cubes. Some people nuke them for a few minutes first (punch holes with a fork), to make them easier to cut and to speed baking time. I use lemon-infused EVOO because I love the taste of lemon on practically everything.

Pour a small amount of EVOO in an 8x10 pan. Coat potatoes lightly with EVOO, turn into pan. Sprinkle with sea salt and a good cracked pepper. Bake, uncovered, at 400 until done (about an hour), stirring occasionally. For so few ingredients this is an amazingly tasty dish. And healthy!

Another good one, though not necessarily for a holiday - Cook sweet potato until done. When cool enough to handle, scrape out the insides and put on a plate or bowl. Top with pumpkin pie spice, a blob of plain low-fat yogurt, and a drizzle of honey. Woo-hoo!

I have a different kind of recipe. I use fresh sweet potatoes, cook them, and remove the skins. I mash them, usually with a fork and drizzle a little butter on them. Form into a ball, with a large marshmallow in the center - totally covered. Sit the ball on a pineapple ring - put a maraschino cherry on top - and you have a beautiful little individual serving. You can make these the day before and then bake at 350 deg. for 15-20 mins.
