From the 1988 edition of  SOUTHERN LIVING ANNUAL RECIPES

 

For 6 servings:

 

1/2 cup mayonnaise

2 tablespoons sugar

2 tablespoons vinegar

4 cups coarsely shredded cabbage

1 cup salted Spanish peanuts, chopped

Cabbage leaves, optional

 

Combine mayo, sguar and vinegar. Mix well.  Chill 2 hours.

 

Combine cabbage and peanuts. Add dressing and toss gently.

 

Serve on cabbage leaves, if desired.

I guess my mom was ahead of her time but fifty years ago she was putting chopped peanuts in her slaw.  I grew up think everybody made it that way.  She doctored her mayo too.
