Asian Beef Noodle Soup

 

4 ounces Uncooked spinach spaghetti, soba noodles, vermicelli
6 cups beef broth
1 cup water
3 Tbs hoisin sauce
1 Tbs soy Sauce
1 Tbs grated gingerroot
1 Tbs toasted sesame seed oil
1 lime juice or 1 pkt. True Lime
12 ounces beef tenderloin (fillet), thinly sliced
3 cups spinach leaves chopped (1 bag spinach salad)
1 cup bean sprouts (optional garnish)

 

  1. Mix stock & seasoning in a soup pot.
  2. Bring to boil.
  3. Simmer beef & spinach 10 minutes
  4. Add noodles & bean sprouts. Simmer 10-15 minutes until beef done.

 

NEXT INGREDIENT:  CELERY

Chicken Salad Bake

 

2 cups cooked chicken, cubed

1 cup CELERY, chopped

1/2 cup onion, chopped

1 (5oz) can water chestnuts, sliced (drain)

1/2 cup shredded cheese

1/2 cup mayonnaise

1 tablespoon lemon juice

1/2 teaspoon salt

1/8 teaspoon pepper

1 small can of shoestring potatoes or about 1 cup

   crushed potato chips

 

Mix together mayonnaise, lemon juice, salt and pepper.  Add all other ingredients except shoestring potatoes; mix well.  Put into a 2 quart baking dish.  Top with shoestring potatoes or crushed chips.  Bake, uncovered, at 400 degrees for 20-25 minutes.

I made the chicken tortillas last week and you weren't kidding - they were delicious!

So easy! That recipe is a keeper 👍

@Zhills  Thank you for sharing this recipe. I am definitely going to make it soon. Why are there 2 measurements by butter and flour? I didn't see an explanation. Is it your recommendation that you can use half the amount?

The first line is half the amount of the 2nd line!

An appetizer for holiday gatherings....

 

Salmon Ball 

 

8 ozs. Smoked (or regular) Salmon

8 ozs. Cream Cheese, softened

1 Tablespoon Honey Mustard*

1 cup PECANS, chopped

1 cup fresh parsley, chopped 

 

Combine PECANS and parsley; set aside.  Mix together the salmon, cream cheese and mustard; shape into a ball.

Roll in chopped PECANS and parsley until completely coated.  Chill and serve with favorite crackers or cocktail rye bread.

 

* Original recipe calls for Honey Dill Mustard which I could not find.  Add pinch of dried dill if desired.

Broccoli and Cheese.

 

Made this plenty of times but not  recently.  No recipe.  Easy to do

 

Pie Plate.  Take a sleeve or more of Ritz crackers and crush them in the Pie plate.  Melt and add  Approximately 4 pats of butter  to make a pie crust.  Then cook enough chopped broccoli to cover the  crust.  On top of broccoli, put slices of Velveeta Cheese.  Put in oven ,350  about 20 mins to just melt the cheese.  My family loves this vegetable.
