@Zhills .... thanks for that update about the apples...what a shame to have them discontinued.  I did Google online and found them available but unsure about ordering from an unknown source.  I guess we find ways to make that combination a different way.  🙁  One thing certain in life...CHANGE!

A repeat for me but good recipe for Thanksgiving.

 

Cranberry Bread

 

1 egg, beaten

2 tablespoons butter, melted

1/2 cup orange juice

2 tablespoons hot water

2 cups flour

1 cup sugar

1/2 teaspoon salt

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda 

1 cup whole cranberries, fresh

1/2 cup chopped NUTS

 

Preheat oven to 325 degrees.  Mix together egg, butter, orange juice and water.  Add flour, sugar, baking powder and baking soda; stir until all ingredients are moist.  Stir in cranberries and NUTS.  Pour into greased and floured loaf pan.  Bake 1 hour and 10 minutes or until done (check at 1 hour).

Olive Tapenade

from Cookie and Kate

 

  • 1 cup Castelvetrano olives, pitted*
  • ½ cup Niçoise or Kalamata olives, pitted*
  • ¼ cup lightly packed fresh flat-leaf parsley
  • 1 tablespoon drained capers
  • ¼ cup extra virgin olive oil 
  • 2 medium cloves garlic, pressed or minced
  • 1 tablespoon lemon juice

 

 

  1. In the bowl of your food processor, combine all of the ingredients (pitted olives, parsley, capers, olive oil, garlic and lemon juice). Pulse briefly about 10 times, then scrape down the sides of the jar.
  2. Pulse 5 to 10 more times until well chopped, but not pureed, or until you reach your desired texture. Serve as desired. Store leftovers in the refrigerator for up to 2 weeks.

Southern Pimento Cheese
A great pre-Thanksgiving snack!  Great on cracters or vegetables!

 

INGREDIENTS

  • 2 Cups freshly grated extra-sharp Cheddar cheese
  • 8 Oz cream cheese, cut into cubes at room temperature*
  • 4 Oz pimentoes, well drained and chopped
  • 2 Tablespoons mayonnaise (Duke’s is traditional)
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp ground cayenne pepper (optional) Adds great flavor!
  • Salt and pepper, to taste

INSTRUCTIONS

  1. In a large mixing bowl or the bowl of your stand mixer, combine the cheddar, cream cheese, pimento peppers, mayonnaise, garlic powder, onion powder, cayenne pepper and black pepper.
  2. Beat the mixture together with a hand mixer, your stand mixer, or by hand with a sturdy wooden spoon or spatula. Beat until the mixture is thoroughly combined.
  3. Taste, and add more black pepper if desired, and/or salt for more overall flavor (I usually add a pinch of two). If you’d like your pimento cheese to have more of a kick, add a pinch of cayenne. Blend again.
  4. Transfer the mixture to a smaller serving bowl. Serve your pimento cheese immediately, or chill it in the refrigerator for up to 1 week.

Pimento cheese hardens as it cools!

Let set out of fridge for 30 minutes to soften!

Thanks for the recipe. I never had pimento cheese, hadn't even heard of it until moving here to the south.  Since then I've had some that was very good and some that was very bad.  I wasn't even sure what was in it, so now I know and I'll try making it myself.

Bacon QUICHE

 

1 (9") pie shell, unbaked

1/2 cup shredded Swiss cheese

1/4 cup finely chopped onion

1/2 cup crumbled, crispy-fried bacon

1 (4 oz) can sliced mushrooms, drained

4 eggs, beaten

2 cups half-and-half

 

Layer cheese, onion, bacon and mushrooms in pie shell.  Beat eggs and half-and-half together.  Pour on top of mixture.  Bake at 400 degrees for 15 minutes and then turn oven to 350 degrees and bake 45 minutes more or until set.
