My family loves garlic, but I rarely use it without roasting it.  I'm never without a jar of roasted garlic in my fridge.

INGREDIENTS
  • large heads of garlic
  • 1/4 cup olive oil
PREPARATION
    1. Preheat oven to 350°F. Cut top 1/4 inch off heads of garlic to expose cloves. Place garlic in small baking dish. Add oil and sprinkle with salt and pepper; toss to coat. Turn garlic cut side up. Cover tightly with aluminum foil. Bake until garlic skins are golden brown and cloves are tender, about 55 minutes. Cool. Squeeze garlic cloves from skins.

Since this isn't technically a recipe, I am going to leave garlic as our next ingredient.

Buffalo Roasted Cauliflower Steaks with Blue cheese dip

Ingredients:

  • 2 heads cauliflower, cut vertically into 1/2-1 inch-thick steaks (4 to 6 steaks total)
  • 2-3 Tbsps avocado, or extra-virgin olive oil, for brushing
  • 1 cup of your favorite buffalo-style sauce (look for minimal ingredients)
  • 1 tsp garlic powder
  • Sea salt and freshly ground black pepper
  • fresh parsley leaves, minced

Instructions:

  1. Whisk garlic powder and wing sauce.
  2. Preheat oven to 425 degrees f.
  3. Place the cauliflower steaks on a large, rimmed baking sheet. Brush with oil and sprinkle with salt and pepper on both sides.
  4. Transfer to the oven and bake for 10-15 minutes on one side, then remove from oven, and brush with wing sauce, flipping the steak over to the other side. Place the cauliflower back in the oven for another 10 minutes or so.
  5. Sprinkle with parsley, and Enjoy!

For the Blue Cheese Dip:
I mixed 1 cup plain Greek yogurt with High-quality blue cheese crumbles..that’s it! My family is not crazy about blue cheese (neither am I) so I just serve it with ranch.

Sea Salt Smashed Potatoes

 

 

INSTRUCTIONS
  • Place the potatoes in a large pot and cover with water. Bring to a boil on top of the stove, reduce heat to medium and cook for 15 minutes. The potatoes should be soft when pierced with the tip of a sharp knife. Drain the water and place the potatoes back into the pot.
  • Preheat oven to 450 degrees F.
  • Add the oil and toss to coat; then place the potatoes on a baking sheet.Take the the bottom of a glass and smash the potatoes; then and sprinkle with the sea salt
  • Bake for 20-30 minutes until they turn brown and crispy.

 

next ingredient:  leftover mashed potatoes

Leftover Mashed Potato Soup

 

This is so easy but delicious! Add bacon, shredded cheese, and parsley!

Ingredients

  • Whatever leftover mashed potatoes you have (at least 2 cups)
  • milk
  • chicken broth or vegetable stock (water if you don't have these)
  • stick butter or oleo
  • celery salt
  • shredded cheese to garnish

Directions

In a large pot, mix potatoes with the following ratios. To every two cups of leftover mashed potatoes, add 1/2 cup milk, 1/2 cup broth/stock/juice, 1/2 stick butter/oleo, 1 tsp. celery salt, dash of pepper. Heat through, stirring until creamy. Serve hot with shredded cheese on top.

My kids LOVE this meal. The trick is having leftover mashed potatoes, sometimes that part is hard!

@GenXmuse  Instead of shredded cheese on top, I put goat cheese in mine. I don't know if the kids would like it that way.

Garlic Chicken

 

4 boneless, skinless chicken breasts

1 3/4 cups of Kellogg Corn Flakes (don't substitute

   with bread crumbs)

3/4 cup grated PARMESAN CHEESE

2 tablespoons dried parsley flakes

1 stick of unsalted butter

1-2 tablespoons garlic powder (or to taste)

 

Mix together corn flake crumbs, PARMESAN CHEESE and parsley flakes; set aside.

 

Melt butter and add the garlic.  Mix well.  Dip each chicken breast in the melted butter and roll in corn flake mixture to coat.  Place chicken in a shallow baking dish.

 

Bake in a preheated 375 degree oven for 50 minutes or until internal temperature reaches 165 degrees.

Banana Bread   

 

Ingredients:

1 3/4 cups all-purpose flour
1 1/2 teaspoons baking soda
3/4 teaspoon salt
3 large eggs
1 1/2 cups sugar
1 cup mashed ripe bananas (about 2 large)
3/4 cup vegetable oil

 

 

Preheat oven to 350°. Coat a 9x5x3-inch loaf pan with nonstick spray.

 

Whisk flour, baking soda, and salt in a medium bowl.

 

Whisk eggs, sugar, bananas, and oil in a large bowl until smooth.

 

Add dry ingredients to banana mixture and stir just until combined.

 

Scrape batter into prepared pan and smooth top.

 

Bake until a tester inserted into the center of bread comes out clean, 60-70 minutes.

 

Transfer to a wire rack; let bread cool in pan for 15 minutes.

 

Run a knife around inside of pan to release the bread. Turn out onto rack and let cool completely.

Savory Stuffing Balls

I like stuffing but it is not something I would ordinarily make except at holiday meals. However, a couple of weeks ago I went to dinner at a local restaurant and, tired of mashed potatoes, I ordered stuffing balls with my roast chicken dinner. I really liked them, so I have been experimenting with my own version. This is a combination that I like, I hope you do, too.

Cook time: 50 Min  Prep time: 10 Min  Serves: 24 small balls

Ingredients

3/4 - 1 c finely chopped onion
1 c butter
1 c peeled and chopped celery
1/2 c chopped fresh parsley
1/2 Tbsp dried sage
1 1/2 tsp dried thyme leaves
1 tsp salt
1 tsp black pepper
12 c dried bread cubes
1 egg, slightly beaten
1 can(s) chicken broth; 14 oz; more if needed

Directions

1. Preheat oven to 375 degrees.
2. Saute onions in butter in large skillet over medium heat for 10 minutes.
3. Stir in celery, parsley, sage, thyme, salt, and pepper. Cook, stirring, over medium heat for 5 minutes. Remove from heat.
4. Add bread cubes to onion mixture; toss thoroughly to coat.
5. Mix together the egg and 3/4 cup of the broth.
6. Add to stuffing to moisten. If stuffing is too dry to stick together add a small additional amount of broth, but do not over moisten.
7. Shape stuffing into 24 small balls (about 1 and 1/2" diameter). If you prefer, you can make the balls a little larger. Place the balls in one layer on a greased baking sheet. Bake, uncovered, at 375 degrees, for 20 minutes.
8. Pour remaining broth over the balls (use a little more broth to just moisten balls if needed).
9. Bake, uncovered, an additional 15 minutes, or until balls are the dry/moist level you desire.

Ground Orange Chicken
 
Ground Orange Chicken is made in one pan and only takes 20 minutes using a Panda Express copycat sauce. So much healthier than the original!
*The key to this dish is browning the chicken well, before breaking it into pieces.
Ingredients
  • 1 pound ground chicken
  • 1 tablespoons ginger root minced
  • 2 teaspoons garlic minced
  • 1/4 tsp hot red chili pepper crushed
  • 1 tablespoon rice wine
  • 2 tablespoons water
  • 1/2 teaspoon sesame oil
  • 4 teaspoons  soy sauce
  • 5 tablespoons sugar
  • 5 tablespoons white vinegar
  • zest of 1/2 orange
  • 1 tablespoon water
  • 1 tablespoon cornstarch
Instructions
  1. To make the sauce combine the rice wine, 2 tablespoons water, sesame oil, soy sauce, sugar, white vinegar, and orange zest.
  2. To make the cornstarch mixture, dissolve 1 tablespoon cornstarch in the remaining 1 tablespoon of water and set aside.
  3. To a large pan add 1 tablespoon oil and ground chicken.
  4. Cook until a good crust forms before breaking apart, then finish cooking by breaking it apart with a spatula and cooking for an additional 2-3 minutes.

  5. Once the chicken is cooked add the ginger, garlic and crushed red pepper and cook for about 10 seconds.

  6. Add the orange sauce and bring to boil.
  7. Add the cornstarch mixture to the pan and cook for just a few seconds, stirring until it thickens.
