I am having a dinner party and I need suggestions for a vegetable. I am having lamb chops, rissoto with blue cheese, sweet and spicy butternut squash and would like some kind of a green vegetable that could be cooked in the oven without too much attention. I already have too many thing I have to watch at the same time!

How about something along the lines of green beans gremolata? Last winter we were asked to bring a veggie to go with a very heavy pasta meal and someone else was alreading bringing salad. So, I googled green beans gremolata (someone had brought them to our house once for Thanksgiving) and also green beans with lemon and garlic. You can make them ahead and they are wonderful at room temperature. I primarily used the Neeley's recipe (and omitted the red pepper flakes). Ina Garten also has a nice recipe. Your meal sounds yummy!

I think roasted asparagus would be good with your menu. It is also easy as you just drizzle olive oil and sea salt on fresh asparagus and roast . You can also prepare green beans, brussels sprouts, and broccoli this way too.

How about roasted Brussels sprouts? In a Garten has a delicious recipe.I do t know how to post recipes but it's an easy Google search. If I was eating your delicious meal, I might like a spinach salad with candied walnuts,red onion, maybe sliced pear,or dried cranberries,and goat or a bit of shaved parmesan cheese, just to have a fresh element. But gosh it just sounds so mouthwatering...lucky guests!!!!

Lots of good suggestions, but have you considered a green salad? Perhaps with baby greens, pears, and a good poppy seed dressing? I think it would be a nice texture change from the other dishes.

I was all for the roasted asparagus, brussels sprouts or broccoli, but the idea of a salad is better yet! You can prepare earlier and just dress before serving.

Salad would normally be my go to but I am determined to serve this butternut squash and I have one person and maybe two who are picky eaters and do not like squash so I was looking for a choice for them.

I have a fantastic layered spinach casserole that has a little tomato and cheddar cheese if you would like it. It takes a 4 qt. buttered casserole and reheates very well!

a salad would be good......spring mix with argula, granny smith apples or raspberries, pecans or walnuts, goat cheese or blue cheese, and a raspberry vinaigrette or champagne vinaigrette. this is one of my favorite salads. sometimes i add hard boiled eggm red onion, and crispy wonton strips.
another vegetable to consider would be baby carrots. i make them on the stove with chicken broth, salt, a little sugar, butter, and some saffron.
