My niece made the best dip this weekend!!

My niece brought this recipe to a get together this weekend and it so simple and so, so good

 

1 can black beans, drained

1 can whole kernel corn,  drained

1 can mild rotel, drained

Red onion chopped to taste

8 oz Mexican cheese blend

Spicy Ranch Dressing to desired consistency

( She couldnt find spicy ranch, so she bought HVR spicy powder and added it to the ranch dressing.)

Serve with tortilla chips

Your dip recipe sounds delicious. Here is a recipe for a favorite around here.

 

2 12 oz. cans black beans, drained and rinsed. 
1 17 oz. pkg frozen corn thawed

2 large tomatoes diced

1 avocado chopped1 sm. onion diced

1/4 cup chopped cilantro 

2 Tbs line juice1 tbs. red wine vinegar

S&P to taste

I've had that before at functions (or something pretty similar).  It's really good but I stay away from it because of the carbs.

Knowledge is knowing that a tomato is a fruit, but Wisdom is knowing not to put it in a fruit salad.

@QVCkitty1  I make a similar recipe in the summer when the corn and tomatoes are fresh. My additions are lime juice, bell pepper and minced jalapeno. Can't stop eating it!

ETA: I just use lime juice, not red wind vinegar, and I use a little EVOO.

@QVCkitty1 We make this with a little olive oil and eat it as a salad, and we also put finely diced red bell pepper and a little onion in with it.  And we use the crispy canned corn or Mexicorn.   In winter, usually without the tomato and avocado.
