Yes, that Cento brand is an occasional find here. Hunts and Furmano is what’s in my pantry right now. My cabbage soup always has tomatoes in it.

Also like another poster mentioned, apple cider vinegar, again start gently.
Cento offers regular canned tomatoes as well as San Marzano. Walmart carries both and they also have the best price. San Marzano's are not cheap but worth it. Cento is not the only brand, but they seem to be one of the more common grocery store brands along with Hunt's, etc.
San Marzano is a particular variety of tomato grown in Italy.

If you used purchased broth, you want to verify it didn’t have sugar.

Among other things, perhaps adding a bit of Worcestershire sauce maybe.

Ok I'm the only one asking this question? OP why would your cabbage soup taste sweet? There's nothing you originally added that has sugar in it. I just don't get it.

TABASCO or Franks. Or fry up some hot sausage and add that. Maybe even add one of those things and some pasta.

It's the carrots, especially in something like soup that is simmered for a while. Here is an explanation:
Some carrot varieties are naturally high in terpenoids, making the carrots taste bitter or soapy. Because terpenoids develop earlier than sugars, a carrot that is harvested too young might taste bitter. To decrease the bitterness, cook the carrots longer to bring out the sweetness.
