Mushroom, Spinach and Goat Cheese Baked Eggs

This recipe is just far to easy to be this delicious, but it is. Simple, clean and scrumtious. I made it for a quick dinner last night. Next time I might try to add in a bit of turkey bacon.

1 tbsp olive oil
6 oz cremini mushrooms, cleaned and sliced
1 clove garlic, minced
2 oz roughly chopped spinach
2 oz goat cheese, crumbled
4 eggs
1/2 cup cherry tomatoes cut in half or 1 medium tomato chopped
parsley for garnish
salt and pepper to taste

Preheat oven to 400 F degrees.

In a large skillet heat the olive oil. Add mushrooms and garlic and cook until mushrooms turn golden. Add spinach and cook until spinach has wilted. Season with salt and pepper. Remove from heat.

Crack the eggs over the mushroom and spinach and season with salt and pepper. Add the chopped tomatoes and goat cheese over the eggs. Bake the eggs for about 5 minutes or until done to your liking. Garnish with parsley.

Serves: 4

This is going onto my next menu (started a new one today).

Just because we prefer it, I will switch out the goat cheese for feta, and already have country ham in the freezer that I will bring to temperature in the skillet first. With a warm bread, this meal should be a good one.

I made this today - thanks for posting! We were supposed to be snowed in today, so I thought it would be the perfect brunch. It was - a little late 'cause Mom slept in! Everyone loved it. I made it exactly as you posted with no additions. Smile
