I had mushrooms to use up so I made this Alfredo for an early dinner while riding out Hilary in So California. It was delicious and satisfying. Saved room for some leftover chocolate cake and ice cream later tonight 🙂 I used farfalle pasta.

Looks really good and I have mushroms to use up--just may cook them at least . I have been on a pasta kick lately, which is not good carb-wise for meWoman Frustrated but it tastes so good!! Made some fresh pesto the other day too. I would have to make this using all dairy free--DD is not a dairy girl-- but have found that using unsweet oatmilk is a very good dupe for the milk in recipes---things taste much like using cows milk and not the thin weird taste,sweet, of using the nut milks--for example in making mashed potatoes--really good in that.

I have subbed Palmini for pasta since I was having glucose issues and needed to eliminate carbs and sugar.

 

They make linguini, rice, angel hair etc. 

 

It is made from Hearts of Palm.

 

No, it isn't 'pasta' but a closer dupe than zoodled zucchini or spag squash IMHO!

 

By time you put stuff on top....very good!

 

I made Shrimp scampi Saturday using the linguini.

Update---I made this recipe last night for dinner and used all non dairy as my DD is non dairy too--it was very good!!! I used the brand Califia Farms for the heavy cream and while she didn't put parm over top, I did. It was good!! Think I will try using a white wine of maybe chicken stock to thin it out a little, it got thick-- instead of pasta water but that is the only tweak. I used vegan butter and olive oil too. Also added bacon bits to it--kind of a carbonara without the eggs. Used white button mushrooms and had an other type of mushroom called (funny,--the mods wouldn't let me use the real name) she-talkies -- that I added.Woman LOL Think adding chicken and broccoli  sounds good. and I always add a pinch of nutmeg to anything creamy like that--
