Since we had rhubarb in our garden I ended up making the Rhubarb-Orange muffins from Nightowlz' recipe. Everyone loved them, even someone who wasn't going to take one. She was walking away when others started talking about them, so she came back and got one. And she told me she was glad she did!

This is a recipe I will make again, and I look forward to trying some of the others too.

Here's a quick & easy, which I often make for sit-down dinners that everyone loves!

Surprise Muffins

1 large or extra large egg

1 pint heavy cream (is it 1 cup?...is it a pint?...it's the little container)

1/4 cup salad oil

1/2 cup sugar

flavoring: 1 tsp. vanilla extract and/or drops of almond extract or both

grated nutmeg

1 1/2 cups all-purpose flour

2 tsp. baking powder

1/2 tsp. salt

Any flavor preserves or jelly

Hand whisk all wet: egg, heavy cream, oil, sugar & flavoring

Fold in dry: flour, baking powder & salt (until just combined)

Fill 2/3 full in prepared muffin tins. Add scant teaspoonful of preserves or jelly on top & press in. Put another tsp. of batter on top.

400 degrees - 22 minutes
