This recipe has made it's rounds a few times on these forums, but I thought I'd mention it again.

 

I am making this recipe today.  I have some ground beef I need to use up.  

This recipe only uses 1lb of ground beef but it stretches it really far.  I got 48 meatballs made with the medium size King Arthur purple scoop.

 

I used my food processor, but you can take a shortcut and buy a bag of shredded cabbage....I did this once while we were camping.

 

I also use a large family size can of Campbell's Tomato soup instead of the regular size, or two regular size cans. There is no salt in the meatballs.  You can use low sodium tomato soup if you wish, or gluten free tomato soup if you have a dietary concern.

 

I serve with mashed potatoes and more tomato sauce is needed, IMO.

I assume it would be ok to use shredded angel hair cabbage slaw in the bag ( it has just cabbage no other veg and is shredded thin).

 

Do you cover the skillet while cooking or uncovered?

 

I think id like this.

 

I may substitute with a can of crushed tomatoes or tomato sauce and add some dried herbs. Not sure Id like the soup flavored sauce.

You can use shredded slaw cabbage.  I would just chop it into smaller pieces so it doesn't poke out of the rolled meatballs. There is a ton of veggies, so it is important to chop everything small.

 

You could substitute any type of tomato sauce.

 

I simmer with the lid on, because it takes 1.5 hours to cook and I didn't want my sauce to simmer away and evaporate. I did take the lid off the last 15 minutes for the sauce to thicken.

 

I made this tonight.  I have enough for another meal for at least two people.  It makes a lot.

Are they as good as they sound?  I don't like "store bought" meatballs because of the testure of the meat.

 

I want to try these.  I have the recipe!

@Zhills   They are good, but very different than the meatballs most of us are used to.

 

They are more veggie than meat.

 

Store bought meatballs are horrible.  I have never found a premade meatball that was any good.

 

My husband absolutely will not eat frozen premade meatballs or even the expensive gourmet Italian meatballs sold in the meat section.

 

He will eat these.

 

Tonight we had stuffed peppers.  I was thinking that I could stuff the Mrs Murphys meat ball mixture into a green pepper and just leave the chopped green pepper out of the meat mixture.  

I cook my stuffed peppers in a tomato sauce, so this might work.  I'm going to give it a try.

Thanks, Carmie.   I've had the recipe for several years now just never cooked them.  I won't buy meatballs either!

 

Hope your peppers were wonderful!  

 

I would not even bother changing the peppers, just use it as is.

@Carmie I am with your DH on store bought meatballs.  Never found one I liked.  I am interested to try this and will use canned tomatoes as a substitute for tomato soup Cook a tomato soup as @LizzieInSRQ suggested.
