MONKEY MUFFINS
(Source: adapted from Simple and Delicious magazine Sept./Oct. 2009)

1/2 c. butter, softened
1 c. plus 1 Tbsp. sugar, divided
2 eggs
1 c. mashed very ripe bananas (about 3 medium)
2/3 c. peanut butter
1 Tbsp. milk
1 tsp. vanilla extract
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
3/4 c. miniature semisweet chocolate chips

Preheat oven to 350 degrees. Grease mini muffin pans or line with paper liners; set aside.
Cream butter and 1 c. sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.
Beat in bananas, peanut butter, milk and vanilla.

Combine flour, baking soda and salt; add to creamed mixture, stirring until just moistened-do not overmix. Fold in chocolate chips.

Fill prepared pans 3/4 full; sprinkle with remaining 1 Tbsp. sugar.

Bake @ 350 degrees for 14-16 minutes, or until a toothpick inserted comes out clean.

Cool for 5 minutes before removing from pans to wire racks to cool completely. Makes 5-6 dozen.
