Minted squash rotini with chickpeas

I tried this recipe recently, and it’s a winner.

 

1Lb. Rotini ( I use whole wheat )

3 Tbs. olive oil

1/2 cup chopped walnuts

2 Med. zucchini  diced in 2 1/2  inch pieces

1/8 teaspoon. Pepper

1/2 teaspoon salt

1 15.5 oz. can of chickpeas rinsed and drained

1/2 cup chopped fresh mint

3/4 cup shredded parm. Cheese

 

cook and drain rotini, toss in large bowl with 1 Tbs. of the oil, set aside

toast walnuts in a sauté pan for 5 min.

heat remaining oil, add zucchini. Pepper and 1/4  teasp salt and cook till slightly tender, but still crisp. 

Add chickpeas and walnuts, and heat through.

Add mixture to the pasta along with remaining salt, mint and 1/2 cup of cheese

stir to combine and top with rest of cheese.

 

This is yummy and satisfying, and great when you want a meatless meal.

@QVCkitty1, I like that your recipe does not have a lot of ingredients and that no oven is needed (hot summery weather just won't go away where I live) but it appears to be a very tasty, easy and healthy dish.  I've saved it to my recipe file.  I expect to use it soon,  Thanks for sharing!.

 Thanks, for the  receipe & cooking  instructions you provided . I'm curious how it tastes with the mint . I'll make this week  for a ladies club meeting.
