Mexican Sweet Corn Cake Recipe?

Hello everyone, I'm searching for Mexican Sweet Corn Cake using Masa Harina or a Jiffy Cornbread Mix. Also a Sweet Corn Cake or a Spoon Bread Recipe. Are these all similar? Please help!! Thanks!!

Chi-Chi’s Sweet Corn Cake

Copy cat recipe

Ingredients:

  • 1/2 cup salted butter, softened
  • 1/3 cup masa harina
  • 1/4 cup water
  • 2 cups frozen corn, thawed
  • 1/4 cup cornmeal
  • 1/3 cup sugar
  • 2 tablespoons heavy cream
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

Instructions:

  1. Preheat the oven to 375 degrees.
  2. Whip the butter with a hand mixer until creamy. Add masa harina and water and blend well until thoroughly combined.
  3. Place the thawed corn in a blender or food processor and pulse a few times. You still want to have some whole chunks of corn left. Add the chopped corn and cornmeal to the masa harina mixture and mix together well.
  4. In a separate bowl combine sugar, cream, salt and baking powder. Pour this mixture into the corn mixture and blend thoroughly.
  5. Spread the mixture evenly in an 8"x8" baking dish. Cover tightly with aluminum foil and place this dish inside a 9"x13" baking dish. Pour about 3 cups of water into the larger baking dish to form a water bath.
  6. Bake at 375 degrees for 50-60 minutes, until the corn cake is cooked through. Remove from the oven and remove the smaller dish from the larger one. Let the corn cake stand for 10 minutes before serving.

@kitty4me... funny I just posted this recipe in kitchens someone wanting a corn casserole.... I have made this easy recipe for years.

 

MEXICAN SPOON BREAD

1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package Jiffy Corn Muffin Mix
1 cup sour cream
1/2  stick butter, melted
1 to 1 1/2 cups shredded Cheddar or any cheese that you like

 

Optional... to kick it up, sometimes I add a can of drained Green Chiles and fine diced Jalapenos.... Robin


Directions

Preheat oven to 350 degrees F.

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter.

Pour into a greased 9 by 13-inch casserole dish.

Bake for 45 minutes, or until golden brown.

Remove from oven and top with Cheddar.

Return to oven for 5 to 10 minutes, or until cheese is melted.

Let stand for at least 5 minutes and then serve warm.

 

Note... recipe to make homemade cornbread mix, if you don't have Jiffy.

Homemade Cornbread Mix....

1-1/3 cups flour
1 cup yellow cornmeal
2 tbsp sugar
1 tbsp baking powder
1/2 tsp salt

OR

2/3 Cup Flour
1/2 Cup Yellow Cornmeal
3 Tablespoons Sugar
1 Tablespoon Baking Powder
1/4 teaspoon Salt

The "Sweet Corn Cake"  recipe is very tasty.
