Mexican Casserole by TiesThatBind

Our friend, TiesThatBind posted this recipe in November, 2009..and I have yet to make it, but I decided I need to do that very soon! Many of us miss Ties and her postings, so I thought I'd share one that some may not have! Thanks, Ties, for all of your wonderful recipes! We miss you and your wonderful spirit.

Mexican Casserole
1 tbsp. olive oil
1 lb hamburger
1/2 package shredded Jack Cheese(I use a whole pack of Colby- Jack shredded) we love cheese!
6 tortillas(soft flour tortillas)
1 can black beans(drained)
1 can corn (drained)
1/2 chopped onion (optional)
1 can cream of chicken soup
1 can Rotel ( I use the mild Rotel....they have medium and hot...just to your taste)

Preheat oven to 350°F. Grease a 9 x 12 pan.
Cook the hamburger with the oil and onions. Mix the two cans of black beans and corn together. Mix the can of Rotel with the cream of chicken soup.
Layer the pan in the following order:
bean and corn mixture
hamburger
1/2 of the cheese
tortillas


Repeat layering until all ingredients are used. Pour the Rotel/chicken soup mixture on top of the last layer of tortillas. After this bakes for 15 minutes I put my shredded cheese on top to melt...it looks divine , too!
Bake for 30 minutes. Love, Ties
