Thanks for all of the advice.  I will try adding another egg and letting it rest before cutting. My basic recipe is similar to all of those suggested, so I will continue to tweak it. You guys are the best !

We like our meatloaf or meatballs made with ground chuck, bread crumbs or oats, 2 eggs, chili sauce, onions, garlic salt, and pepper.

Meatloaf

1/12 lbs. Ground beef

1/2 cup ketchup

1/3 cup V-8 juice

Salt and pepper to taste

1/8 tsp. Red pepper( cayenne for taste not hot at all)

2 eggs,beaten

1/4 cup minced onion

3/4 cup Italian bread crumbs

2tsp. Prepared mustard

Topping

1/4 cup ketchup

1/2 tsp. prepared mustard

2 tsp. Brown sugar

Mix meatloaf ingredients together &put in a 9X5 loaf pan. 

Mix topping ingredients together & spread over meatloaf. 

Bake in preheated 350* oven for 45 min. or until meat is done.
