We have had a little break in the temperature and I have had my oven on for the first time in ages. If the break holds out, this recipe will find its' way on the menu this week. My Mom made a meatloaf very similar to this one. I never could quite reproduce it but this one is the closest one to hers. Hope you enjoy if if you try. It is from Rotel, even though the one on their website includes cheese; the original that was published in magazines and that I use, did not include cheese.

1 1/2 pounds of ground beef

3 slices of bread, torn into small pieces

1 egg

1 can of Rotel (I use original)

1 small onion, chopped

1 teaspoon chili powder ( I use more)

1/4 teaspoon pepper (again, I use more)

1/2 cup chili sauce ( I use the whole bottle-found in the ketchup isle in my local grocery stores)

Preheat oven to 375 degrees. Mix all ingredients except the chili sauce. Bake in 8 and 1/2 inch loaf pan for 1 hour. Drain excess drippings. Pour chili sauce over top and bake another 1/2 hour.
