May have made a mistake, could be Lemon Sponge Pie?

I posted looking for a recipe similar to my mom and grams lemon sponge cake but after e mailing my sister she said she sort of thinks it was a pie and how I got it was one layer.

So, if any of you ladies have a tried and true lemon sponge pie recipe that is moist and very good would you kindly post it, thank you.

Did it look like this?

Lemon Pudding Cake

Ingredients:

  • 3 eggs, separated
  • 1/2 cup milk
  • 1/4 cup lemon juice
  • 1 tsp lemon zest
  • 1/2 cup sugar
  • 1/3 cup all-purpose flour
  • 1/8 tsp salt

Directions:

Whisk together the egg yolks. Blend in milk, lemon juice, and lemon zest. Add sugar, flour, and salt. Whisk until batter is smooth.

Beat reserved egg whites until stiff peaks form. Gently fold into the batter.

Pour into a greased 1-quart casserole dish (mine was 1 1/2 quarts). Place in a 13Ă—9 inch pan or other large casserole dish. Pour hot water into pan up to a depth of about 1 inch.

Bake at 325 degrees for 35-40 minutes, or until golden brown (I baked mine just a smidgen too long!). Can be served warm or cool.

Hey doglover3, let me test this recipe for you and make sure it is the right one.

It looks amazing - I LOVE lemon {#emotions_dlg.thumbup}

ETA, I think the photo is beautiful, not baked too long at all. I would like the top like that, a bit crunchy.

Oh, that looks awesome - right up my alley! A friend gave me some Meyer lemons from her mom's tree last week - do you think they would work?

Zhills, yes it did look exactly like that and I just thought it was made in a deep but single layer 9 inch cake pan but yes, this is just what it looked like and was soooo good. thank you so much.
