@Mom2Dogs  I guess you could freeze the spread and thaw and eat without it making you sick, but the consistencyy just isn't going to be right. The cream cheese may tend to dry out and the oil in the mayo will separate.

I'm not crazy about that recipe.  I made it when the recipe first came out years ago.  My mother's pimento cheese is so much better.

That's JoAnna Gaines recipe for the 1919 Pimento Cheese if my memory serves me.

@PA Mom-mom    I would if I had the recipe.  She never used recipes when she cooked (except for cakes).  I do know that she did not use cream cheese or sour cream in her recipe.

My friend's recipe for pimento cheese uses only mayonnaise:

 

2 cups shredded sharp cheddar

2 cups shredded medium cheddar

4 oz jar diced pimentos

1 tbsp vinegar

1 tsp sugar

1 cup mayonnaise

 

Mix well and refrigerate for 1 hour before serving.

@deepwaterdotter   Thanks, that sounds like Mama's recipe.

@PA Mom-mom    This recipe from deepwaterdotter sounds like the one my Mother used.   I think she only used sharp cheese.  I will try it the next time I get a hankering for Pimento Cheese and let you know.

@deepwaterdotter Thank you for posting this recipe. I was looking for something just like this. I made it and it's so good. I left out the sugar and vinegar & added 2 roasted peppers from the jar. It is exactly what I was craving.
