I learned many of my cooking skills by watching Food Network before my kids were born, and learned the "smashed potato" method from Rachel Ray. It's the only way I make them, because we like the texture of the chunks of potato.

I ALWAYS use red skinned potatoes because they don't have that weird graininess to them. I mash them with milk, cream cheese or sour cream, butter, salt, pepper and sometimes cheese.

Not to change the subject, but does anyone like Mashed Cauliflower?   I love that .... cauliflower has really been popular the past few years.  I bet the cauliflower farmers are happy.

I like it, too.   Years ago I had gained a little weight and did some Atkins, which was all the rage at that time (worked great, btw).  That was the first time I tried mashing cauliflower and it was very good.  I like all veg, though, so that probably helps.

@Tinkrbl44   I've never had it but I'm not real fond of cooked cauliflower.  I've tasted other things that were made out of cauliflower and just haven't been thrilled with them.  I do add some to my mac and cheese as the cheese and pasta helps to mellow out the cauliflower flavor.  I do like raw cauliflower though....go figure!
