[ Edited ]

Mashed Potato Pot Pie

What happens when you combine two comfort foods into one dish?

You get a super comfort food, of course!

Stretch your favorite meat pot pie a little further by serving it over Idahoan Baby Reds® (or other) Mashed Potatoes.

End result?
A a dish that is warm and filling... and oh so comforting.

Serves: 2

Ingredients
  • (1) 4-oz package Idahoan Baby Reds (or other) other Mashed Potatoes
  • (2) frozen single serve chicken, beef, or turkey pot pies (Boston Market's would be extra tasty)
Instructions
  1. Bake or microwave pot pies following package instructions.
  2. While pot pies are cooling, prepare Idahoan Baby Reds (or other) Mashed Potatoes according to package instructions.
  3. Divide mashed potatoes between two bowls.
  4. Invert warm pot pies over the top of each serving of mashed potatoes, breaking the crust to allow veggies and gravy to cover the potatoes.

I have actually done this with mashed potatoes and pot pies. It's actually really good, and it stretches out that nice gravy that you have with the pot pies. It is really good comfort food.

I also used to put either some extra mixed cooked veggies in, or some cooked green peas or cooked cut green beans in too, to make what I would call a mini one dish meal out of it. Cat Very Happy

Toppers:

Sometimes I shred some sharp cheddar/other cheese over the top for extra protein - and savory yumminess.  Smiley Happy
