Martha Stewart's Blueberry Lemon Bundt Cake

 

I used her recipe to bake this cake...it is dee-lish!!! Smiley Very Happy The recipe calls for sour cream which makes the cake nice and moist.

Did your blueberries sink?

 

I make a blueberry lemon pound cake in the bundt pan and they always sink.

@CelticCrafter: The trick to keep blueberries from sinking, is to lightly dust them in flour before adding them to the batter.

@Diva on The Q, I thought maybe Martha had a better method.

 

I've tried the flour and they sink.  I've tried half cake batter then berries then more batter and more berries and the berries in the center sink.  I guess I will always have sinking berries!

@CelticCrafter: Are the berries wet, are you using too much flour? Can't think of a reason why they still sink if you dust them with flour. Sorry!!!

This combo in any form is De-Lish! Toss in a few almonds or pecans if you wish too.

I always use about 1/4 cup of the flour mixture from what I'm making to the blueberries to toss them in to keep them from sinking.

I generally use frozen blueberries since I always have those on hand. I leave them in the freezer until I add them to the mixture.

Just fold the blueberries in lightly.

Keep trying. Trying makes perfect.
