Mardi Gras Recipes Anyone?

I'll kick it off with a recipe for Jambalaya using chicken and smoked sausage (torn from an old Taste of Home magazine):

 

1 lb smoked sausage, sliced thin

1 lb boneless, skinless chicken breasts, cut into bite-size pieces

2 tbsp flour

2 tbsp butter

1 big onion, chopped

2 tsp minced garlic

3 ribs celery, chopped

1 green pepper, chopped

1 tsp dried basil

a pinch of Cajun seasoning

1 15-oz can diced tomatoes

1/2 tsp sugar

1 1/2 cups chicken broth

2 cups cooked rice

 

Saute sausage and chicken in big pot, drain grease.  Save in dish for later.

 

Melt butter in same pot and stir in flour for a minute.  Stir in onion, garlic, celery, green pepper, basil, Cajun seasoning, tomatoes, and sugar.  Simmer over low heat until celery is mostly tender, 15-20 minutes.

 

Stir sausage and chicken back in pot and simmer 10 minutes.  Stir in chicken broth and simmer 5 minutes.  Stir in rice.

I love jambalaya using chicken and smoked sausage and make it for my hubby. (Also make a seafood version, but this one is a favorite). The last time I had it myself, it sent me to the ER w/ a gallbladder issue (that I didn't know I had). So now, even though I could eat it, I just can't bring myself to have any jambalaya. Hubby doesn't care ... more for him.

A good recipe for Super Bowl or Mardi Gras. Goes well w/ sliced baguette, crackers or chips.

 

Cajun Shrimp Dip - From Will Cook for Smiles

Ingredients
1/2 lb raw shrimp
1/2 tsp Cajun seasoning
1 tbsp canola oil
6 oz bacon
1 small red onion
1 red bell pepper
salt
8 oz cream cheese softened
1/2 cup sour cream
7 oz Pepper Jack cheese shredded or grated
4 oz jalapeno cheddar cheese* optional
2 tsp Cajun seasoning
1/2 cup Pepper Jack cheese for topping

 

Instructions
Preheat oven to 375 and grease a baking dish big enough for the dip.
In a mixing bowl, combine softened cream cheese, sour cream, grated Pepper Jack cheese, grated Jalapeno cheese, and Cajun seasoning. Mix thoroughly, until evenly combined.


Chop raw shrimp into small pieces and mix with Cajun seasoning. Set aside.


Dice bacon, red onion, and red bell pepper. Preheat a cooking pan over medium heat. 


Add a tablespoon of oil to the pan and add bacon. Saute until bacon bits start to crisp and add veggies. Season with a little salt and cook until veggies are soft and start to brown.


Add shrimp to the pan and saute just until shrimp turn opaque. Add shrimp and vegetables to the mixing bowl with cheese and fold until it’s mixed throughout.


Transfer into a baking dish and spread it evenly.


Spread about 1/2 cup grated Pepper Jack cheese over the top.
Bake for 15-18 minutes.

A one skillet meal; 30 minutes, served 6

Dutch Oven Red Beans and Rice

Ingredients

  • 1 tablespoon olive oil
  • 2 celery ribs, sliced
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 package (14 ounces) smoked turkey sausage, sliced
  • 1 carton (32 ounces) reduced-sodium chicken broth
  • 1 can (16 ounces) kidney beans, rinsed and drained
  • 1-1/4 cups uncooked converted rice
  • 1/3 cup tomato paste
  • 1 bay leaf
  • 1-1/2 teaspoons Cajun seasoning
  • 1/4 teaspoon cayenne pepper
  • Hot pepper sauce, optional

Directions

  1. In a Dutch oven, heat oil over medium-high heat. Add celery, onion and green pepper; cook and stir until crisp-tender, 3-4 minutes. Add sausage; cook until browned, 2-3 minutes.
  2. Stir in broth, beans, rice, tomato paste, bay leaf, Cajun seasoning and cayenne pepper. Bring to a boil; reduce heat. Simmer, uncovered, until rice is tender and liquid is absorbed, 15-20 minutes, stirring occasionally. Discard bay leaf. If desired, serve with pepper sauce.

NOTE:

 
  • Also called parboiled rice, converted rice is the unhulled grain that has been steam-pressured before milling. This process retains nutrients and makes fluffy separated grains of cooked rice. Converted rice takes slightly longer to cook than regular long grain rice.

This is a contemporary recipe 

 

Time: PREP 30 min / BAKE 25 min

 

SERVES: 6

Ingredients

  • 1-1/4 pounds uncooked medium shrimp, peeled and deveined
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 4 medium tomatoes, seeded and chopped
  • 2 tablespoons Cajun seasoning
  • 3 garlic cloves, minced
  • 1/4 cup butter, cubed
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1-1/2 cups shredded cheddar cheese
  • 1 cup diced fully cooked andouille sausage
  • 12 lasagna noodles, cooked and drained
  • 4 ounces pepper jack cheese, shredded
  • 1 teaspoon paprika

Directions

  1. In a large skillet, saute shrimp and onion in oil until shrimp turn pink. Stir in tomatoes and Cajun seasoning; set aside.
  2. In a large saucepan, saute garlic in butter for 1 minute. Stir in flour until blended. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheddar cheese until smooth. Add sausage; set aside.
  3. Spread 1/3 cup shrimp mixture over each noodle. Carefully roll up; place seam side down in a greased 13x9-in. baking dish. Top with cheese sauce. Sprinkle with pepper Jack cheese and paprika.
  4. Cover and bake at 350° for 15 minutes. Uncover; bake 10-15 minutes longer or until bubbly. Let stand 15 minutes before serving.

Red Beans and Rice by Lucinda Scala Quinn

 


INGREDIENTS

 

  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped (about 1 cup)
  • 2 celery stalks, peeled and finely chopped
  • 1/2 red or green bell pepper, cored, seeded, and chopped
  • 3 garlic cloves, minced
  • 1 pound dried red kidney beans, soaked overnight in cold water
  • 10 cups water
  • 1 ham bone end, ham hock, or cured pork product of some kind (2 to 3 slices of bacon will work, too)
  • 2 teaspoons Tabasco sauce, plus more for serving
  • 2 teaspoons coarse salt
  • 1 teaspoon dried thyme
  • 1 bay leaf, crushed
  • 1 recipe Basic White Rice
  • Halved, grilled seared sausage (optional)
  • Hot sauce, for serving

DIRECTIONS

  1. Heat a large pot. Swirl in the oil. Add the onion, celery, bell pepper, and garlic and saute until soft and lightly caramelized, 11 to 12 minutes.
  2. Drain and discard the soaking liquid from the beans and add the beans to the pot. Pour in the fresh water and stir. Bring to a boil, reduce the heat, and simmer uncovered for 1 hour. Skim off any foam as it rises to the surface.
  3. Add the ham bone, Tabasco sauce, salt, thyme, and bay leaf. Continue to cook until the beans are soft and tender, 30 to 60 minutes more. (The time will vary depending on the age of the beans, so taste frequently.) Using the back of a spoon or spatula, crush some of the beans against the side of the pan to create a slightly creamy consistency.

 

** This is the first red beans and rice recipe I'd made that didn't come from a box that began with "Z"!  I have since tried others, but DH likes this one! Lucinda's mother-in-law was from New Orleans, and her husband ate this all of the time when he was growing up.

 

 

Every time I make this for a party there are no leftovers.  I make my rice in a rice cooker, because we like lots of rice.  I have always used ham, and I don't include sausage.

 

 

We have a New Orleans connection, so we will be making a special dinner the weekend before Mardi Gras.  Smiley Happy

This recipe looks really good. It's a bit different from the red beans and rice I make. I'm going to give your version a try soon. I will probably include sausage as we both like sausage. Thanks for sharing your recipe.

This casserole brings Mardi Gras right to your dinner table. Great for a group, this crab and shrimp dish packs a bit of heat. It's cheesy, creamy, tangy and ready in just a pinch

 

Ingredients

  • 1 package (8 ounces) cream cheese, cubed
  • 4 tablespoons butter, divided
  • 1 large onion, chopped
  • 2 celery ribs, chopped
  • 1 large green pepper, chopped
  • 1 pound cooked medium shrimp, peeled and deveined
  • 2 cans (6 ounces each) crabmeat, drained, flaked and cartilage removed
  • 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
  • 3/4 cup cooked rice
  • 1 jar (4-1/2 ounces) sliced mushrooms, drained
  • 1 teaspoon garlic salt
  • 3/4 teaspoon hot pepper sauce
  • 1/2 teaspoon cayenne pepper
  • 3/4 cup shredded cheddar cheese
  • 1/2 cup crushed butter-flavored crackers (about 12 crackers)

Directions

  1. Preheat oven to 350°. In a small saucepan, cook and stir cream cheese and 2 tablespoons butter over low heat until melted and smooth.
  2. In a large cast-iron or other ovenproof skillet, saute onion, celery and green pepper in remaining butter until tender. Stir in shrimp, crab, soup, rice, mushrooms, garlic salt, pepper sauce, cayenne and cream cheese mixture.
  3. Combine cheddar cheese and cracker crumbs; sprinkle over top. Bake, uncovered, until bubbly, 25-30 minutes.
