Mandarin Orange Jello Salad With Lemon Pudding Layer

1 Large Package Orange Jello

6 Ounces Frozen Orange Juice Concentrate

2 Cans Mandarin Oranges, Drained

1 Small Can Crushed Pineapple, Drained

2 Cups Boiling Water

 

Lemon Pudding Layer

 

1 Large Package Instant Lemon Pudding

1 Cup Cool Whip

 

Dissolve Jello in boiling water.  Add orange juice concentrate and stir until dissolved.  Add mandarin oranges and pineapple.  Chill until set.

 

Prepare pudding as directed on package for pie.  Add Cool Whip and mix until combined.

 

Chill until set.

 

Pour over set Jello.

 

Serve immediately or chill in refrigerator until ready to serve.

@CareBears   Thanks so much for posting.  I love the idea of the orange and lemon tang.  I don't remember seeing a recipe before that paired jello with pudding.

@Honeybit My husband and I loved it, it was such a nice refreshing salad for the HOT temperatures we have been having!

I'm making this as a summer dessert.  If I put it in a cake pan, I can cut it into squares and send a piece in DH's lunch.
