I call them salmon patties. I use canned salmon, skin and bones removed, broken up with a fork, a starch (bread crumbs, crushed saltine crackers, or corn meal mix), chopped onion, a sprinkle of dill, and a couple of eggs. Mix ingredients, shape into patties, and fry in hot veggie oil till brown on both sides, turning once. Drain on paper towels and eat while hot. We like them with ketchup. They're great with mashed potatoes, green peas, and sliced garden tomatoes -- which is exactly how my mom always served them. Delicious!
