You can also find these in the frozen food section of the grocery store as potato skins if you are too lazy to prepare them as I am.

I have made these for many years but I use tater tots so it is very fast to put together. Bake the tots and a few minutes before they are done, I load them up with cheese and bacon crumbles and put back in the oven to melt the cheese and when they are done I sprinkle on green onion slices (if I have them) and sour cream. Quick supper for me some nights

So simple, but I hadn't thought of it. I saw this recipe posted on Monday morning and made a version of it Monday night. I used only the butter and Parmesan cheese. They were excellent. I'm looking forward to making them as per your recipe next time.

I would never had thought of boiling the potatoes first, but you prepare the rest while they are cooking and it seems to go fast!  I love potatoes so this is a big winner for me. 

So many variations with cheeses and meats!  Enjoy!

@Zhills   I just finished my dinner of ham 'n egg, with a serving of these potatoes alongside.  I used a few 'B' sized red potatoes, but over-guesstimated how many to use and wound up with enough for two servings.  Not sorry.  Woman Embarassed
