Made these last night...so good, made for brunch

INGREDIENTS 
 
1 medium potato 
1 tbsp butter melted
garlic salt (I used Garlic/Pepper)
1-2 slices bacon cooked and crumbled

2 Tbsp shredded cheddar cheese (or your favorite)

sour cream for topping

INSTRUCTIONS 

 Preheat oven to 350⁰.

  1. Begin by washing potatoes and slicing into thin rounds (about ¼" thick).
  2. Place potatoes in a pot filled with water and bring to a boil. Cook for 3-4 minutes. Drain and pat dry potatoes.  Potatoes won't be 'done'
  3. Place foil on a baking pan and spray with cooking spray.
  4. Place potatoes on pan. Brush lightly with melted butter.
  5. Sprinkle on garlic salt, cheeses and crumbled bacon pieces.
  6. Bake for 16-18 minutes.
  7. Serve (or top with) with sour cream. ENJOY!

Really good with scrambled eggs!

Sounds DELISH, @Zhills !  Dumb question:  Do I have to peel the potatoes?

Looks like you also added some scallions, yum.

I peeled my potato but if you like the peel, don't need to peel it.

 

Didn't have scallions.  Next time!  Was surprised at how good they were!  Like a Loaded Baked Potato!

 

Boiling the potato cuts down the baking time!  Ready in 30 minutes!

@Zhills ....thank you!!!  This recipe is a keeper for me!  I am having a brunch on Thanksgiving so will add it as something new!  I think I would enjoy this with dinner too.

Yes, that is a good thing.  I like that you can make one or several for more people...just increase ingredients.

That's very close to the foil packets we put on the grill. A favorite of ours - bits of diced onion is included too.
