Made rice balls last night and they were delicious

I could not sleep since I already had enough sleep and awoke really hungrry.

 

I reheated my home made rice balls filled with some thick homemade tomato sauce, cooked ground beef with sauteed diced onions, green peas, and diced smoked mozarella.

 

It was a very delicious snack, which I truly enjoyed.    

 

I make enough rice balls to freeze for 12 future snacksSmiley Happy.

 

P.S. These can be breaded and oven baked or deep fried...... your choice.

I get the midnight munchies all the time!  I try hard to resist.

 

The rice balls sound wonderful.  How do you make them?  DH loves rice, and I'm always looking for a new supper element.

I want to thank you, @GiantsLover , for creating this thread.  
 
Now that I am cooking for one, Quick ‘n Easy has become my menu style over my former Delicious & Varied preference when there were two of us at the table.  
 
Your mention of Rice Balls triggered my tastebuds.  I made a batch of Arancini and, for dinner last night, enjoyed two of them with marinara sauce I already had.  There are two more in the refrigerator for probably tomorrow’s dinner and three sets of two in the freezer for later dates.  So for five meals, in spite of the hour invested in making them (total over a span of two days), in the long run, these still fit into the Quick ‘n Easy category.

I have never seen or eaten rice balls, but I love rice, and eat it often.

I ALREADY HAVE POSTED THE RICE BALL RECIPE I USE THE MOST, BUT HERE IT IS AGAIN, THIS TIME IN BLACK BOLD PRINT WHICH IS EASIER TO READ, FOR THOSE WHO ARE STILL INTERESTED.

 

Serves 8.

 

Ingredients:

 

 

           2 eggs

 
  • 1/3 cup grated Parmesan cheese
 
  • 1 tablespoon dried parsley
 
  • 1/4 teaspoon freshly ground black pepper
 
  • 1 teaspoon salt
 
  • 1 quart water
 
  • 1 teaspoon salt
 
  • 1 cup uncooked white rice
 
  • 1 1/2 cups dried bread crumbs more if needed
 
  • 1 cup olive oil and 1 cup vegetable oil
 
  1. In a medium bowl, whisk together eggs, cheese, parsley, pepper, paprika and 1 teaspoon salt. Cover and refrigerate.
 
  1. Pour water and 1 teaspoon salt into a large saucepan and bring to a boil. Stir in rice and reduce heat to low. Cook rice until water is almost absorbed, stirring frequently. Remove from heat and slowly pour in egg mixture, stirring rapidly to prevent egg from scrambling. Allow rice mixture to cool for 1 hour.
 
  1. Pour bread crumbs into a pile on one end of a cutting board. Dampen hands and roll rice mixture into 1 inch balls, then coat each one with bread crumbs and then deep fry in hot oil turning frequently until golden color and drain on Bounty Paper Towels.
  

        4. Drain on paper towels and serve warm, or freeze some.
