@lucky-girl  I have found the recipe from an old Fannie Farmer cookbook to be my favorite.  You can find it online.  I add some sour cream to mix before putting in the pan to bake for an evev better taste.

Southern Mac & Cheese

 

Ingredients:

 

4 cups cooked elbows (2 cups uncooked)

 

2 cups shredded cheddar cheese

 

3 eggs, beaten

 

2 Tbsp. butter

 

1 cup milk or evaporated milk

 

Salt to taste

 

Directions:

 

Preheat oven to 350

 

After elbows are cooked and drained, pour into casserole dish and stir in butter

 

Once cooled, add cheese and stir to distribute

 

Combine remaining ingredients (I use a shaker cup) and stir into macaroni

 

Top with extra cheese on top if desired and bake for 30-45 minutes until cheese is melted to your preference.

 

 

You never know how strong you are until being strong is the only choice you have.

The  Oh! My! Mac and Cheese

 Doubled, it will fit a 9 x 13.  One recipe does a

9 x 9.

Reheats like a dream!  I loved it so, I took it home in a baggie!!!

 

4 C hot small macaroni noodles (8 oz uncooked)

2 C (8 oz) shredded sharp cheddar cheese

1 C cottage cheese

3/4 C sour cream

1/2 C milk 

2 Tbsp grated fresh onion

1  1/2 tsp butter, melted

1/2 tsp salt

1/4 tsp pepper

1 large egg, lightly beaten

Cooking Spray

 

Topping

1/4 C dry bread crumbs

1 Tbsp butter, melted

1/2 tsp paprika (optional for extra flavor)

2 C shredded sharp cheese

 

Preheat oven to 350 degrees.

Combine first 10 ingredients, stir well.

Pour into sprayed casserole.

Spread 2 cups shredded cheddar cheese over top of casserole.

Mix butter, breadcrumbs, and paprika

Spread on top of casserole

Cover with foil.

Bake 350 for 45 minutes.

Uncover and bake 10 minutes or until bread crumbs are browned.

 

Six one cup servings

I always make Ina Garten's recipe for Mac 'n Cheese (including sliced tomatoes on top) (I probably add more cheese than she does ... not more gruyere though) -- everyone loves it!!  So easy to make.  You can find it on the Food Network, if you'd like to make it.  Good luck.

@lucky-girl , this is a very easy but quite delicious slow cooker version for mac 'n  cheese.  This is the recipe as I received it:

 

SLOW COOKER MACARONI AND CHEESE

Cooking spray

2 eggs

1½ cups [dairy] milk

1 can evaporated milk

½ lb elbow macaroni

4 cups shredded cheddar, divided 3 cups + 1 cup

1 tsp salt

½ tsp pepper

 

Coat the inside of the slow cooker with cooking spray. In a large bowl, beat eggs with fresh and

evaporated milks. Mix in UNCOOKED macaroni and 3 cups shredded cheese. Stir in salt and pepper.

Transfer to oil-sprayed slow cooker, and sprinkle remaining 1 cup cheese on top. Cook on low for 5 to 6 hours. DO NOT STIR OR REMOVE LID while cooking.

 

Note:  These are the ingredients I added:to the recipe

white pepper, garlic powder, onion powder, ground mustard, parsley flakes and a scant hint of grated nutmeg; 1-2 TBS butter
