This is the recipe we like.
Best Mac n' Cheese I have ate is Dadgum That's Good Smoker recipe. You can also make it in the oven. It's really yummy.
Four-Cheese Smoked Mac n’ Cheese
Ingredients:
1 (16 ounce) package elbow macaroni
1/4 cup butter
1/4 cup all purpose flour
3 cups milk
1 (8 ounces) cream cheese, cut into large chunks
1 teaspoon salt
1/2 teaspoon black pepper
2 cups extra sharp Cheddar cheese, shredded
2 cups Gouda cheese shredded
1 cup Parmesan cheese, shredded
Directions
1. Load the wood tray with one small handful of wood chips and preheat the smoker to 225° F.
2. Cook pasta according to package instructions. In a medium saucepan, melt butter, and whisk flour into the butter. Cook over medium heat for 2 minutes, until sauce is bubbly and thick. Whisk in milk and bring to a boil. Cook 5 minutes until thickened. Stir in cream cheese until mixture is smooth. Add salt and pepper.
3. In a large bowl, combine 1 cup Cheddar, 1 cup Gouda cheese, Parmesan cheese, pasta, and cream sauce. Spoon mixture into an 11 by 9 ½-inch aluminum roasting pan coated with nonstick cooking spray. Sprinkle top with remaining Cheddar cheese and Gouda cheese.
4. Place in smoker and cook 1 hour at 225° F, until brown, bubbly and delicious.

@Nightowlz This definitely looks like a recipe I would be interested in. You said it could be made in the oven. At what temperature and for how long would you suggest. Also, since it wouldn't be going into a smoker, would you suggest maybe a smoked cheese in the recipe?

Are you looking for a 'saucy' mac and cheese or not saucy?
I was born and raised in Savannah, GA and we don't make 'saucy' mac and cheese, it's more solid.
I can post my recipe if you're not looking for saucy mac & cheese., it's very similar to Paula Deen's recipe, a friend and neighbor of mine.

I cooked it in the oven same temp/time as on the smoker.
Guess you could use a smoked cheese to give it more of a smoked flavor. Smoked Gouda would probably be good.

I make mine in a saucepan on the stovetop:
1 lb elbow macaroni
1/4 cup butter
1/4 cup flour
1/2 tsp salt
2 cups warm milk
1/2 lb shredded cheddar cheese
Cook macaroni.
Melt butter in saucepan. Stir in flour over medium heat and cook to a roux (3-5 minutes).
Stir in salt and a dash of pepper.
Slowly stir in milk and cook until bubbly.
Stir in cheese a little at a time until melted.
Drain macaroni and stir into cheese sauce.

I have said many times I am not a mac and cheese lover UNTIL I made Fleming's Steakhouse Chiptole Cheddar Macaroni and cheese recipe (google it). It is awesome and is a family favorite for all the Holidays.
