MINI CORN DOG MUFFINS - From Butter Your Biscuit

This recipe makes me wonder why I never thought of doing this a long time ago. What a great excuse to use my mini muffin pans. I think my grandbabies would like these ... probably their dads would eat a half dozen themselves. 

 

I would use either Hebrew National kosher or little smokies. 

 

 

MINI CORN DOG MUFFINS - From Butter Your Biscuit

INGREDIENTS
1 cup all-purpose flour
1 cup yellow cornmeal
½ teaspoon baking soda
¼ teaspoon salt
1 cup buttermilk
½ cup unsalted butter
1/3 cup honey
2 eggs
6 hot dogs, cut into 1-inch pieces

 

INSTRUCTIONS
Preheat oven to 375 degrees. Spray a mini muffin tin with cooking spray.

Be sure to coat each cup.


In a large bowl, combine flour cornmeal baking soda salt, and whisk until mixed. Whisk in the buttermilk, butter, honey, and eggs just until combined.


Fill each muffin tin about 1/2 full and place a hotdog piece in the center (see below).


Bake for 8-10 minutes, or until golden brown


Serve with ketchup or mustard.

I use Jiffy cornbread mix.

Have you made little corn muffin corn dogs? I just wonder how close they taste to real corn dogs since they're not fried in grease. I also wonder if kids just like corn dogs because it's food on a stick. 

 

The last time I had an actual corn dog it was on some work road trip and I was talked into buying/eating a jalapeno corn dog. It was actually kind of tasty. I just had to not think about WHAT was in the dog part of the corn dog. Smiley Sad

I made it to use up some Jiffy mix and hot dogs I bought during the pandemic shut down.  We liked it, but my son is in high school, so past the only liking it because it's on a stick thing.  The outside of the muffin gets crispy so I didn't miss it being fried at all.

Oh ... good to know the ouside gets crispy, I like crispy. Thanks for sharing your experience making these. I'll be babysitting soon, so these go to the top of the list for what to make for lunch.

@kate2357 .  I agree it's nice to have a use for the mini muffin tins.  I have several and rarely use them.  Last time I did I tried Martha White blueberry muffin mix and added in some fresh blueberries.

 

They were delicious and the pint size was easy to freeze and have a portion controlled bite.

I am finding lots of different uses for those mini muffin tins. It's kind of fun coming up w/ bite size appertizers and desserts. I use them to bake cookies, brownies, wonton bites .... etc etc. Never thought of little corn dogs though.
