1/4C sliced almonds

1/4C butter

4 small to medium fresh sole or flounder fillets

1/2t salt and 1/8t pepper

1t fresh chopped parsley and some extra

1T lemon juice

paprika

Put first 2 in an 8X8" dish

Microwave on HI just til almonds are golden - appx. 4 minutes - watch.

Remove almonds from dish and set aside.

Put fish in the dish, turning to coat with the butter.

Combine salt & pepper with the parsley and almonds and sprinkle on fish.

Drizzle with lemon juice.

Roll up and leave in dish with seams down.

Cover with wax paper directly on the fish.

Microwave - HIGH - X 4 minutes then uncover.

Baste with dish juices - sprinkle with paprika - Recover.

Microwave - HIGH - X 4 minutes or til flaky.

Let sit X 4 minutes.

Garnish with more paprika and extra parsley to serve.
