My neighbor gave me this recipe she found on the internet.  I made it today for brunch and it is a keeper.

 

1 med garnet yam
1/2 cup drained, rinsed black beans
2 t olive oil
1 t chili powder
1/4 t kosher salt
1/4 t freshly ground black pepper
1/2 cup shredded cheddar cheese
2 T sour cream
1 T fresh lime juice
1/4 cup diced avocado
1/4 cup diced tomato
1 scallion, diced

 

Pre heat oven 400.  Puncture yam with fork in several places and place on foil lined baking sheet.  Bake until tender about 1 hour.

 

Toss beans with oil, chili powder, salt and pepper.  Mix in cheese and set aside.

 

When potato is done slit it down the middle and cool for a few minutes.  Fill with bean mixture and bake until filling is warm and cheese melted (about 10 minutes).

 

Whisk together sour cream and lime juice and drizzle on potato.  Top with avocado, tomato and scallion. 

 

I used 1/2 of a large avocado, 1 roma tomato and 1 scallion.  I did not measure this part.

Minus the sour cream and cheese, this is a favorite combo for me.  I like to add some steamed broccoli too.
