Probably a repeat for me but for those who have not seen it....good one!  Serves 4 or 2 very hungry people!

 

Chicken Salad Bake

 

2 cups cooked chicken, cubed (2-3 chicken breasts)

1 cup celery, chopped

1/2 cup onion, chopped 

5 oz. can water chestnuts, drained (sliced or diced)

1/2 cup shredded cheese

1/2 cup mayonnaise

1 tablespoon lemon juice

1/2 teaspoon salt

1/8 teaspoon pepper

1 1/2 cups (approx) CRUSHED POTATO CHIPS or

                                1 small can Shoestring Potatoes

 

Mix together mayonnaise, lemon juice, salt and pepper; set aside. Combine chicken, celery, onion, water chestnuts and cheese.  Add mayonnaise mixture and stir all together.

Put into a 1 1/2 to 2 quart casserole dish.  Top with CRUSHED POTATO CHIPS.  Bake, uncovered, at 400 for 20-25 minutes.

@walker @That lookaso good and the addition of water chestnut gives it even more crunch and interest. I took a screenshot and will be making soon!

@GenXmuse @and @sabatini ....thanks for messages...it is pretty easy and I like the extra crunch with water chestnuts as well.  Even my meat/potato or pasta DH likes it so must be good! 😉

From the 'Just a Pinch' recipe site. Sounds good to me!

 

If pasta salad and coleslaw had a baby, this side salad would be the result. It's truly the best of both worlds. This cool and creamy salad is slightly sweet and tangy and full of texture. Cucumber and bell pepper add a touch of freshness and there's a little bite of onion. Once it sits, the flavors blend very well. A delicious side salad for any summer BBQ.

Pasta Slaw

 

SALAD
7 oz Ditalini pasta (salad macaroni, not elbow macaroni)
4 C cabbage, shredded (about 1 medium head)
1/2 small onion, finely chopped
2 celery ribs, finely chopped
1 medium cucumber, peeled, seeded and chopped
1 green bell pepper, chopped
1 medium carrot, shredded
 
DRESSING
1 1/3 C mayonnaise
1/3 C sugar
1/4 C apple cider vinegar
1/2 tsp salt
1/4 tsp pepper
 
1. Cook pasta, drain, rinse, and place in large bowl.
2. Combine remaining salad ingredients and refrigerate.
3. Blend all dressing ingredients.
4. Pour dressing over the top of the salad. Mix thoroughly and refrigerate until ready to eat.

@sabatini .... love salads and with pasta...even better!  Sounds good and will try this summer.  Thanks!  Some of us keep trying to pump life into this thread ...😁.....on we go...or not?  Any recipes welcome!

I posted a response but it looked like it got lost in the trash compactor! I'm okay either way but it seems like interest has waned and most people post on the general what they've made or are making. I have an abundance amount of recipes so I'm okay with participating or not.

I am so sorry I had to drop out of this thread. My life became very complicated last year and I have really not had time to work on new recipes. I rarely even go out to look for new recipes anymore.
