I know most people are fans of mint but I am not a huge fan so I make a "dressing" for my watermelon salad similar to this.

 

I use lime instead of lemon - just personal preference.

 

 

Citrus Honey/Agave Dressing:

 

  • 2 tablespoons freshly squeezed orange juice
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon honey or agave
  • 1/2 teaspoon grated orange zest
  • 1/2 teaspoon grated lemon zest

 

 

I use apples for the "White" sometimes, I always seem to have apples.

I'm with you regarding mint! It's nice, but a little goes a looong way.

Honey-Glazed Chicken KABOBS

 

2/3 cup reduced-sodium soy sauce

2/3 cup honey

1/2 cup canola oil

1 tablespoon horseradish

2 teaspoons steak seasoning

2 garlic cloves, minced

2 lbs. boneless skinless chicken breasts, cut into

          1-1/2 inch cubes

1 large sweet red pepper, cut into 1-1/2 inch chunks

1 large green pepper, cut into 1-1/2 inch chunks

1 large onion, cut into 1-1/2 inch wedges

 

Combine first 6 ingredients.  Pour 1 cup marinade into a large bowl or shallow dish.  Add chicken and turn to coat; refrigerate remaining marinade.

 

Drain chicken from marinade and discard marinade.  On six metal or soaked wooden skewers, alternately thread chicken and vegetables.  Grill, covered, over medium heat for 5-7 minutes on each side or until chicken juices run clear, basting frequently with reserved marinade.

@walker, I love the addition of horseradish to your marinade! IMO, it's underused as an ingredient, but really adds some zippy oomph and dimension.

I was JUST gonna say the same thing!!! Horseradish in the marinade is such a great idea!!!

The horseradish is what caught my eye with this recipe too.  On my list for summer grilling!

@walker & @ChiliPepper, a few years back I was throwing together a ham glaze, desperately using only the stuff I had on hand.

 

I looked for a few recipe ideas for my scant ingredients, & saw where someone had added horseradish to their glaze. Huh.

Anyway, I tried it, & was so surprised how it added something extra to the typically too sweet glaze.

@sabatini ....... just had to tell you and everyone here that I made the Pasta Salad recipe you posted recently.  It is VERY GOOD!!!!  It will be my new summertime side salad.  I did take a shortcut and used the bag Coleslaw Mix available....used 4 cups of it.  Also, did not use all of dressing...about half with extra left if needed.  YUM!  Try it!

I LOVE the idea of the horseradish in the ham marinade! I am definitely going to try that!
