@walker, you asked a very thought provoking question.

The monthly Recipe Swap has been going on for ages now. Has its day come and gone?

What do you say, @momtochloe@GenXmuse@Zhills@Little Tex@RespectLife@house_cat?, @Shihtzursqmom@kate2357?

I'm sure I've forgotten other names. So sorry.

I vote keep 'er going!

I so enjoy this thread!!!

It's okay w/ me if we hit a little lull sometimes.

I copied this in 2015 and it was really good!  Forgot all about it til Ham was selected!!

Ham and Cheese Impossible Pie

3 tablespoons finely grated Parmesan cheese
8 ounces Gruyère cheese, shredded (2 cups)
4 ounces thickly sliced deli ham, chopped
    4 scallions, minced
    1/2cup (2 1/2 ounces) all-purpose flour
    ¾ teaspoon baking powder
    ½ teaspoon pepper
    ¼ teaspoon salt
    1 cup half-and-half
    4 large eggs, lightly beaten
    2 teaspoons Dijon mustard
    1/8 teaspoon ground nutmeg

***edited to remove links

  •

INSTRUCTIONS:

  1. 1. Adjust oven rack to lowest position and heat oven to 350 degrees. Grease 9-inch pie plate with softened butter, then coat plate evenly with Parmesan.
  2. Combine Gruyère, ham, and scallions in bowl.

Sprinkle cheese-and-ham mixture evenly in bottom of prepared pie dish.

Combine flour, baking powder, pepper, and salt in now-empty bowl.

Whisk in half-and-half, eggs, melted butter, mustard, and nutmeg until smooth.

Slowly pour batter over cheese-and-ham mixture in pie dish.

  1. Bake until pie is light golden brown and filling is set, 30 to 35 minutes.

Let cool on wire rack for 15 minutes. Slice into wedges. Serve warm

It reminds me of @sabatini  Puff recipes!!

Hi, @RespectLife! I loved that you voted, & thus far, since you're the only person who actually cast one, I'd say you're the winner!  Smiley Very Happy

(Though this is certainly not up to me.)

I also thank you for that impossible ham 'n cheese pie recipe. It sounds right up my alley! I posted ham as a next ingredient because I actually have some that I'd like to use is a different way, so a double TY to you.

Plus, I am always a sucker for Gruyère!

3 cloves garlic, minced or 3/4 t. granulated garlic

4-6 fish fillets (white fish-cod,halibut,tilapia etc.)

Vegetable oil

Corn Salsa

1 c. Fresh corn kernels or frozen (thawed)

2/3 c. red onion diced

1 jalapeño, seeded and finely diced

1 - 10 oz. can black beans, drained and rinsed

Avocado Crema

1 avocado, large dice

1 c. Sour cream

1/4 c. cilantro

Zest of 1 lime, Juice of 1/2 - 1 lime

Kosher salt and black pepper

Directions:

  • Make Crema by combining all Crema ingredients in blender or food processor. Transfer to serving bowl or squirt bottle.
  • Fish - Combine all seasonings in small bowl (if using granulated garlic instead of fresh, add it to bowl with other seasonings). Rub seasoning mix into both sides of fish fillets. Heat skillet over medium high heat with a drizzle of veg. oil. If using garlic cloves, add to skillet and sauté 20 seconds. Add 2 fillets to skillet and sear for 2-3 minutes before before touching/moving. Flip carefully and cook 2 minutes or so till done (should be white and flaky). Remove from skillet and place on a rack on a cookie sheet and keep warm in oven while cooking remaining fillets.
  • Corn Salsa - After fish is cooked, add another drizzle of oil to skillet, still over medium high heat. Add corn, onion and jalapeño. Cook 1-2 minutes without stirring. After 1-2 minutes, stir and cook a few more minutes, till carmelized. Add black beans and heat through.
  • Serve as a bowl (rice, fish , corn salsa with a drizzle of avocado crema, or in tortillas as a taco, or in a salad.
  • Other toppings - diced tomatoes, avocados, pico.
