Pat Nixon's Date Nut Bread

An old-fashioned date nut bread, moist and flavorful.

  • Yield: 2 loaves 

ingredients

  • 1 pound packaged dates
  • 2 teaspoons baking soda
  • 1 1/2 cups boiling water
  • 1 stick of  butter
  • 1 3/4 cups sugar
  • 1 egg
  • 2 3/4 cups flour
  • 1 cup chopped nuts
  • 1 teaspoon vanilla

instructions

Cut dates into small pieces and place in a bowl. Add baking soda to boiling water and pour over dates in bowl. Set aside and let mixture stand. You will be using both the dates and the soaking water in the recipe.

 

With a mixer, cream butter and sugar together. Add the egg. Strain water from the date mixture into the cream, sugar and egg mixture. Add flour and beat well. Add nuts, dates, and vanilla.

 

Pour the mixture into greased 8 x 4″ loaf pans. Bake for one hour in a 350 F oven.

Air Fryer Eggplant

adapted from loveandlemons.com

 

  • 1 large eggplant, peeled, sliced into ¼ inch rounds
  • sea salt, for sprinkling
  • 1 egg
  • ½ cup panko bread crumbs
  • ½ cup flour
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon sea salt
  • freshly ground black pepper
  • extra virgin olive oil, for drizzling
Preheat the air fryer to 370°F.
 
Sprinkle the eggplant slices with salt on both sides and place in a large colander to drain for 30 minutes.
 
In a shallow bowl, whisk the egg.
 
In a medium bowl or rimmed plate, combine the panko, flour, cheese, salt, and several grinds of pepper.
 
Pat the eggplant slices dry, dip them into the egg, and then into the panko mixture. Place on a plate as you work and then drizzle the slices with olive oil.
 
Place in a single layer in the air fryer and air fry for 17 to 20 minutes, or until crisp and golden brown, flipping halfway through cooking. Work in batches if necessary.

Oh my ladies. Several new recipes for me to try. Starting with the date nut bread. That looks so yummy.

 

Crab Alfredo - From DELISH

Ingredients
12 oz. FETTUCCINE or linguine
3 tbsp. butter
3 cloves garlic, minced
3 tbsp. all-purpose flour
1 c. heavy cream
1 c. low-sodium chicken broth
1 1/2 c. freshly grated Parmesan, plus more for garnish
1 tbsp. Old Bay, plus more for sprinkling
kosher salt
Freshly ground black pepper
2 tbsp. freshly chopped parsley, plus more for garnish
1 lb. lump crab meat
Juice of 1/2 lemon

 

Directions

Step 1
In a large pot of salted boiling water, cook linguine according to package directions until al dente. Drain and return to pot.
Step 2
In a large skillet over medium heat, melt butter. Add garlic and cook until fragrant, 1 minute, then add flour and stir until golden. Pour over heavy cream and chicken broth and simmer until thick, 3 minutes. Add Parmesan and let melt, 2 minutes.
Step 3
Season with Old Bay, salt, and pepper. Stir in parsley and crab meat and toss until coated, then add linguine and toss until fully combined.
Step 4
Garnish with Old Bay, parsley, and Parm and squeeze with lemon.

This is my family's favorite recipe and they have shared it with friends all over the country and now my grandkids love it and they are sharing it with their friends. It's simple to make and tastes great.

 

GODFATHER CASSEROLE

1 1/2 lbs ground chuck

 2 jars spaghetti sauce ( I use 4 cheese, but you can use what you prefer)

 2 cups sour cream (or more if you prefer)

1 pkg cream cheese (8 oz)

 l large package egg noodles

 2 cups mozarella cheese shredded

Brown ground beef and drain, add spaghetti sauce, season to taste and simmer for just a little while.

 

Boil egg noodles according to package directions. I use the extra wide noodles.

 

In a seperate bowl, mix the cream cheese and sour cream.

 

When noodles are done, drain and put in the bottom of a 13X9 baking dish ( I use glass sprayed with Pam).

On top of nooldes spread sour cream/cream cheese mixture, then pour the ground beef/spaghetti sauce mixture.

 

Put in oven at 350 and bake until it's bubbly around the edges.

Top with the 2 cups of shredded mozarella and bake until cheese melts. I serve this with salad and garlic bread.

 

When my son was in high school, his friends would come over everytime we had this because it was everyone's favorite, when he went into the Marine Corps his wife had to learn to make it and they shared it all over the country wherever they were posted at the time. Now they are all back here in Texas and my grandkids have gotten their friends into Godfather, so now they all request that whenever they are all around. You can substitute low fat sour cream, cream cheese, and mozarella cheese if you want. This is easily doubled, but when I double it, I bake it in a large metal pan, it's probably about a 11 X 15 size pan maybe, not sure on the size.

FuneralPotatoes (Hash-Brown Casserole)

TOTAL TIME: 1 hour SERVES: 6-8

  • 1 (30-ounce) package frozen shredded or cubed hash-brown potatoes
  • 9 tablespoons butter
  • ½ onion, diced
  • 3 cups cornflakes, lightly crushed
  • 2 cups sour cream
  • 2 (10½-ounce) cans cream of chicken soup
  • 1 teaspoon salt
  • 2 cups grated cheddar cheese

1. Preheat oven to 350 degrees. Set out hash browns until thawed slightly.

2. In a small skillet over medium heat, melt 1 tablespoon butter. Add onion and cook, stirring frequently, until translucent, about 5 minutes. Remove from heat and set aside.

3. In a small saucepan over medium heat, melt 4 tablespoons butter. (Alternatively, melt remaining butter in a heatproof bowl in microwave). In a medium bowl, combine melted butter with cornflakes.

4. In a large bowl, combine sour cream, remaining butter and cream of chicken soup. Add salt, onions, grated cheese and hash browns, and stir to combine. Transfer mixture to a 9-by-13-inch baking dish.

5. Top casserole with corn flake mixture. Bake until crisp on top, 45-55 minutes.

Coffee Dessert Bars (Baileys IRISH CREAM Recipe)

Ingredients
1 1/4 cups all-purpose flour
1 1/4 cups unsweetened cocoa powder
1 cup granulated sugar
1 cup brown sugar
1 teaspoon sea salt
1 cup unsalted butter, melted
3/4 cup Baileys IRISH CREAM

6 large eggs, divided
1/2 cup mini chocolate chips
8 ounces cream cheese
4 cups powdered sugar
1 tablespoon instant coffee granules


Instructions
Preheat the oven to 350 degrees F. Line a 9 X 13 inch baking dish with parchment paper. In a large bowl, mix the flour, cocoa powder, granulated sugar, brown sugar, and salt together.


Whisk in the melted butter, Baileys Irish Cream, and 3 eggs. Once smooth, stir in the mini chocolate chips. Spread the batter evenly in the prepared baking dish.


Place the cream cheese in the food processor (or the bowl of a stand mixer.) Puree/Beat to soften. Scrape the bowl, then add 3 eggs, powdered sugar, and instant coffee granules. Puree (or beat on low) again until completely smooth. Pour the mixture over the top of the brownie batter.


Bake for 55-60 minutes, until the center is set when jiggled. Cool for 15 minutes, then place the pan in the refrigerator to chill. Once the bars are completely cold, lift the entire batch of bars out of the pan by the edges of the paper and cut. Baileys Irish Cream Coffee Bars can be left out on the countertop for up to 3 days, or refrigerated for up to a week.

Almost 2 years ago, a friend gave me a bottle of Almond Roca liqueur and I had no idea what to do with it, & now I do!

I'll use it in lieu of Bailey's when I make these bars....probably this weekend.

BIG DAY TOMORROW....may as well start with....

 

A JOLLY Good Bloody Mary

 

1 (1 quart) bottle Bloody Mary Mix

1 1/4 cups vodka

2 tablespoons lime juice

1 teaspoon tabasco

1/2 teaspoon pepper

celery sticks

 

Mix all but celery in big pitcher.  Serve over ice in tall glasses with a celery stick.  Cheers!

This is a basic cookie recipe with the addition of Rice Krispies which add a nice, crisp crunch.

Load them up with whatever suits your fancy. I always use lots of chocolate and nuts.

 

The last time that I made them, I didn't have enough oatmeal, so threw in a bunch of cornflakes to make up the difference.

Therefore, they definitely qualified as a breakfast food; Rice Krispies, Cornflakes and oatmeal!  Smiley Very Happy

 

Rice Krispie Chocolate Chip Cookies

 

Ingredients

  • 1 cup butter softened to room temp
  • 1 cup brown sugar
  • 1 cup sugar
  • 2 teaspoons vanilla
  • 2 large eggs
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups rolled oats
  • 2 cups rice krispie cereal
  • 2 cups semi-sweet chocolate chips

Instructions

  • Preheat oven to 350° F.
  • Mix the flour, baking powder and baking soda together in a bowl and set aside. In a separate bowl, cream together the butter, brown sugar and sugar for about 2-3 minutes with an electric mixer.
  • Add the eggs and vanilla and mix for 2 more minutes.
  • Add the flour mixture and just mix enough to combine everything. Stir in the oats, cereal and chocolate chips with a large spoon.
  • Use a cookie scoop to scoop the dough onto a prepared cookie sheet. Bake for 10-12 minutes or until the edges start to turn a light golden brown.

I don't think I have ever had Almond Roca liqueur...sounds kind of good tho.

 

Probably would also taste good used in a chocolate milkshake or chocolate brownies. Maybe even in a nice cup of coffee with a splash of cream.
