This is exactly how I use up my leftover mashed potatoes.   I usually have about 2 cups of potatoes leftover, and only use 1/2 cup of flour mixed with egg and chopped onion.   I do not flour my potato cakes before frying in either bacon grease, or a combo of oil and butter.   If I decide to add cheese, I form the potato cake around a piece of Velveeta before frying.

A friend of mine used to make these...she called them "fadges" and how appropriate so close to St Pat's day!  However, a "fadge" is much closer to a flatbread than a pancake!  She was such a fun loving person and never professed to being a cook so we savored her "fadges"!  Or perhaps that is what she learned from her family!
