@house_cat OMG! Looks sooooo good. The only problem is, i wouldn't dare make it because I would devour it all by myself. Cherry, my favorite and so pretty!

I commend you. I went without sugar for 4 months and I didn't miss it after the first 2 weeks. Then, Christmas came and the Oreo White Fudge cookies were calling my name at Target and I was a dead man! Those are my Achilles Heel, every year. I bought, not one or two boxes but 8 boxes. I gave 2 to my grandson (that's all my daughter allowed) kept 2 out and put 4 boxes in the freezer. So, " You are a better man than I am Charlie Brown " as the saying goes. I intend to stop all sugar again, next week.

I'm glad you like the recipe. I've never made it, but I certainly intend to make it the very next time I have guests.  

I gave up sugar and flour on Christmas Day, because I was worried about developing Type 2 diabetes like my dad did at my age.  Since then I've lost 23 pounds.  It's not easy because I bake and cook for my husband who's a skinny bolink and can eat anything.

@house_cat I stopped for the same reason. I have Pancreatic problems so I have to be careful. My problem is they don't want me to lose weight. they don't want me to eat sugar either. When I stop the sugar like you, I lose weight. When I was off of the sugar, nothing sweet tempted me until....  Just stay healthy and keep it up!

Italian Green Beans with Tomatoes

1 pound green beans

2 tomatoes, cut into wedges
1 small onion, sliced
1/4 cup Parmesan Cheese, grated
Ripe olives
 

Vinaigrette Recipe
1/3 cup EVOO
2 T red wine vinegar
1clove garlic, chopped
1 t Salt
Dash of pepper

Mix all dressing ingredients together and shake to combine 

Directions:

Cook beans uncovered in skillet or pan for 5 minutes

Cover and continue to cook until tender (10-15 minutes) and Drain

Pour Vinaigrette over warm beans and toss

Cover and refrigerate at least 2 hours (or overnight) 

With a slotted spoon, remove beans to a lettuce lined plate or platter

Add tomatoes around the edge and scatter onions over them on the platter platter

Sprinkle with cheese and garnish with olives


Serve at room temp.....or slightly chilled.

 

I fix the green beans and put in fridge then add the other items when ready to serve!

Tomato Beef Casserole

 

12 oz bag wide egg noodles

1# lean ground beef

1/2 tsp salt

1 can tomato soup

1 can golden mushroom soup

1 cup milk, 2% or whole

1/2 onion, chopped

2 tsp. Worcestershire sauce

1/4 tsp pepper

1/4 tsp garlic powder

1 C shredded mozzarella or Italian blend cheese

 

Preheat oven to 350.

PAM a 9 x 13 baking dish.

 

Cook egg noodles to firm as they will cook more as this bakes in the oven.  Drain.

 

Brown ground beef with onion.

 

In large bowl stir together tomato soup, golden mushroom soup, milk, Worcestershire sauce, pepper garlic power. Add the ground beef and egg noodles. 

 

Pour into prepared baking dish.  Sprinkle cheese on top.

 

Bake for 25 minutes.

 Grasshopper pies are good, chocolate mint brownies are delicious.  My vote for the easiest, most elegant dessert is the creme de menthe parfait.  The non-alcoholic version was a favorite when I was a kid and the real one was even better when I was legal.

 

Bring out your prettiest glass dessert dishes (sundae, parfait, martini glasses) and pour a little creme de menthe in the bottom. Add scoops of vanilla ice cream and gently push down on the ice cream so the creme de menthe percolates up.  Top off with a little more creme de menthe and whipped cream.  Yum!

Honey Roasted Carrots
 

Yield: About 8 servings

 
Prep Time: 15 minutes
Cook Time: 40 minutes
 
Ingredients
  • 3 lbs carrots , peeled and sliced on a bias to 1 1/2-inch long pieces (slice thicker portions into halves)*
  • 3 Tbsp olive oil
  • Salt and freshly ground black pepper
  • 3 Tbsp honey
  • 1 1/2 Tbsp apple cider vinegar
  • 2 1/2 Tbsp chopped fresh parsley
  • 1 Tbsp fresh thyme leaves
Instructions
  1. Preheat oven to 400 degrees. Place carrots in a mound on a 17 by 12-inch rimmed baking sheet. Drizzle with olive oil and season with salt and pepper and toss to evenly coat. Spread into an even layer. Roast in preheated oven 20 minutes then remove from oven. In a small bowl stir together honey and apple cider vinegar. Drizzle carrots with honey mixture and toss well to evenly coat. Return to oven and roast about 10 to 20 minutes longer. Remove from oven, toss again and sprinkle with fresh parsley and thyme. Serve warm.
  2. *Thicker carrots are preferred. If thin reduce roasting time as needed.

Strawberry Cream Cheese Crescent Rolls

Ingredients

1 pkg pillsbury crescent rolls

8 tsp strawberry jam

4 oz cream cheese, room temperature

1/4 c sugar

1/2 tsp lemon juice

1/2 tsp pure vanilla extract

1 egg white

1 tsp water

1 Tbsp sugar (to sprinkle on top, if desired)

Directions

  1. Preheat oven to 375. Line cookie sheet with aluminum foil.
  2. Mix together cream cheese, sugar, lemon juice and vanilla extract until creamy and there are no lumps.
  3. Unroll crescent rolls. On fattest part of triangle; spoon on 2 tsp of cream cheese mixture and 1 tsp of strawberry jam. Roll and make sure fattest part of crescent roll is on the bottom of pan so that filling doesn't ooze out.
  4. Whisk together egg white and water. Brush over each crescent roll.
  5. Bake for 9-10 minutes until crescent rolls are golden brown. Sprinkle with granulated sugar, if desired. 

You can use any fruit preserves or jam in this recipe!

Easy Salmon Spread

 

Three 5 oz. cans of canned salmon
2-3 tablespoons fresh dill, chopped
2 oz. cream cheese at room temperature
¼ cup mayonnaise
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons lemon juice
1 teaspoon lemon zest

 

Place Canned Salmon in a medium sized bowl and flake.  Mix in rest of the ingredients, cover and put in fridge until well chilled.  Serve with buttery crackers.
